A tasty, easy-to-make chicken dish -- my husband loves it. Sometimes I cut the chicken in strips,and serve over pasta.

Steps:
- Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
- Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

BALSAMIC MARINATED CHICKEN BREASTS
This is a recipe I made up after eating LOADS of bland chicken breasts. Chicken is so easy to prepare and this recipe makes the meat extra tender and juicy.

Steps:
- Whisk together the balsamic vinegar, water, onion, red pepper flakes, garlic, salt, pepper, paprika, rosemary, parsley, chili powder, and oregano in a bowl, and pour into a resealable plastic bag. Add the chicken breasts, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 30 minutes to overnight.
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, or lightly grease a broiler pan. Remove the chicken breasts from the marinade, and shake off excess. Discard the remaining marinade, and place the chicken breasts onto the baking sheet.
- Bake in the preheated oven until the chicken breasts are golden brown and no longer pink in the center, 30 to 40 minutes. An instant-read thermometer inserted into the center should reach 165 degrees F (74 degrees C).

- Preheat oven to 400 degrees F (200 degrees C).
- Place the potatoes on a baking sheet; drizzle olive oil over potatoes and season with salt and pepper.
- Place the chicken breasts in a baking dish. Pour 1/2 cup of balsamic vinegar over the breasts; season with salt and pepper. Cover with aluminum foil.
- Place the potatoes in the preheated oven and bake for 10 minutes; place the dish with the chicken in the oven and cook both the potatoes an chicken another 20 minutes; flip both the potatoes and chicken; reduce the oven heat to 350 degrees F (175 degrees C). Bake another 20 minutes.
- Pour 1/2 cup of balsamic vinegar into a small saucepan and place over medium heat. Cook until reduced to about 1/4 cup. Place the chicken breasts atop the potatoes; drizzle with the reduced balsamic vinegar to serve.

- Place a chicken breast into a large Ziploc bag, close the bag almost all the way, then pound the chicken to a thickness to 1/2-inch thick; repeat with remaining breasts.
- Mix together salt, pepper, flour, and sage.
- Dredge flattened breasts in a mixture; shake off excess flour.
- Melt together the olive oil and butter in a large wide sauté pan or large electric griddle (one with a cover) and brown the chicken over medium-high heat for 3 minutes on one side.
- Add the garlic and shallot then turn the chicken over and sprinkle with the mushrooms.
- Saute for an additional 3 minutes, stirring the mushrooms so that they will cook evenly.
- (You may need to cook the chicken one or two at a time if you don't have a large pan; if so, cook them all then add them all back into the pan for the final steps.) Stir in the balsamic vinegar, chicken broth, and wine.
- Cover and simmer over medium-low heat for 10 minutes, basting with the sauce and turning the chicken once or twice.
- Season with salt and pepper to taste and serve.
- Makes 4 servings.
- You can also cook the breasts without flattening them first.

- Place the chicken pieces into a re-sealable container. Pour 2 tbsp. dressing over top of the chicken, seal, and refrigerate for at least 4 hours and up to overnight.
- Remove chicken from dressing discard dressing. Heat a large skillet over medium-high heat. Add the marinated chicken and turn often until cooked through, about 8 minutes. When the chicken is almost cooked through, add in the frozen veggies. Turn the heat down to medium, add in the remaining dressing , and continue cooking until the vegetables are heated through- about 5 minutes.
- While the chicken is cooking, prepare the brown rice according to the package directions. Set aside.
- Serve the chicken & veggies alongside the brown rice. Enjoy!

- Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
- Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
- Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.

- Whisk together balsamic vinegar, olive oil, honey, Dijon mustard, garlic, basil, salt, and pepper in a small bowl.
- Combine chicken and 1/2 of the marinade in a resealable plastic bag. Marinate chicken for 1 hour to overnight. Reserve the other 1/2 of the marinade until grilling.
- Preheat an outdoor grill for medium-high heat, to approximately 400 degrees F (200 degrees C). Lightly oil the grate.
- Remove chicken from marinade and discard used marinade.
- Place chicken on the hot grill and baste with reserved marinade. Lower grill to medium and cook until chicken is no longer pink in the center and the juices run clear, 6 to 8 minutes per side. Baste with marinade on each side when flipping chicken. Chicken should reach an internal temperature of 165 degrees F (74 degrees C). CHICKEN BREASTS AND BALSAMIC VINEGAR
I needed a fast recipe for some boneless chicken, and this was it. Adapted a bit from a recipe I had, it was delicious. Suitable for just family, or company, too.

Steps:
- Mix the flour, salt and pepper in a shallow dish, and dredge the chicken in it.
- Heat oil in large skillet and cook the chicken until brown on one side (about 3-4 min).
- Turn the chicken and add the garlic.
- Cook 3 minutes more, while stirring the garlic around.
- Add the broth, vinegar, bay leaves, and herbs.
- Cover tightly, reduce heat to med-low, cook for about 10 minutes, turning chicken a couple of times. (When you get to the end of this step, you have a choice...you can proceed and reduce the sauce, or you can stop now after ADDING THE TBSP OF BUTTER. This way, you have more sauce, which is the way my husband likes it.)
- When chicken is done, remove from pan.
- Bring heat back up to med.
- ,and cook the pan juices for 7 minutes, uncovered.
- Stir in butter and remove bay leaves.
- Spoon sauce over the chicken.
- I served white rice on the side, and spooned a bit of sauce over that, too.
- Yum.

YUMMY BALSAMIC VINAIGRETTE CHICKEN BREASTS
I had this in a pile with other recipes. I am marinating my chicken now and will prepare this for dinner this evening. I'm posting it for safe keeping. To save calories, you could substitute chicken broth for the olive oil. Prep time does not include marinating time in the refrigerator.

- Mix well with a whisk.

- Preheat oven to 425 degrees.
- Place the chicken breasts into a baking pan.
- Pour the olive oil over chicken.
- Add the garlic cloves, chopped, to the pan over chicken.
- Grind the black pepper over chicken to suit your taste.
- Layer the fresh mushrooms over the chicken in the pan.
- Cut or chop the fresh cilantro into small pieces over the chicken.
- Include the stems and leaves.
- Pour the Balsamic vinegar over chicken to cover the breasts.
- Cover the baking dish an place on center rack of oven for 40 minutes.
- I have also made this recipe using frozen chicken breasts from the freezer when in a hurry for a dish.
- If chicken is frozen cook for a total of 1 hour 20 minutes and check to insure chiken is done by cutting into one of the breasts.

- Combine broth, vinegar, and honey in a small bowl.
- Melt butter and heat oil in a large nonstick pan over low heat.
- Place flour in a shallow pan or dish.
- Dredge chicken in flour and shake off excess.
