BALSAMIC GLAZED PORK WITH CARAMELIZED ONIONS

My market had a sale on boneless, country style pork ribs so I stocked up. Not wanting to baste with a tradiditional tomato barbeque sauce, I became bold and made this up as I went along. The end result was very tasty indeed. You could use boneless chicken breasts or boneless pork chops in place of the ribs.

Balsamic Glazed Pork With Caramelized Onions image

Steps:

  • *Note-You could use chopped fresh garlic in place of the dried powder, but I wouldn't add it until the the last ten minutes or so.
  • I'm thinking the garlic may burn if you add it at the beginning and would ruin the dish.
  • Combine all dry spice ingredients.
  • Sprinkle on both sides of the ribs, rub into meat surface.
  • Let stand at room temperature for 1/2 hour.
  • In a large skillet, add the olive oil and 2 tablespoons of the butter over medium-high heat.
  • When the butter has melted, add the ribs.
  • Cook for approximately 5 minutes, and then turn over and sear the other side.
  • You want to get a nice crust from the spices on each side.
  • Add the chopped onion.
  • Cook for approximately five more minutes, stirring the onions until they become tender and are starting to brown.
  • Pour the balsamic vinegar over everything in the skillet.
  • Turn the heat down to medium-low and cover the skillet.
  • Cook for approximately 10-15 minutes more, depending on the thickness of the meat.
  • Occasionally stir the onions and turn the meat.
  • You want to really caramelize the onions, until they become slightly charred.
  • They take on a lovely, sweet and smoky flavor.
  • Test your meat to ensure that it's cooked through by inserting a meat thermometer in the center.
  • Temperature should be 170 degrees.
  • Remove the pork and onions to a platter.
  • Turn the heat up to medium-high.
  • Add the wine to the skillet.
  • Stir up the browned bits in the skillet with a wooden spoon.
  • Cook until the wine is reduced by about half, five minutes.
  • Take the skillet off of the heat, and add 1 tablespoon butter.
  • Stir the sauce until the butter has melted, and season with salt and pepper.
  • Pour the sauce over the pork ribs and onions.

Steps:

  • Place a rimmed baking sheet on the middle oven rack and preheat to 450˚ F. Toss the brussels sprouts and potatoes with 1 1/2 tablespoons olive oil and 2 smashed garlic cloves in a large bowl; season with salt and pepper. Spread out on the hot baking sheet and roast until tender and browned, 25 to 30 minutes.
  • Meanwhile, season the pork all over with salt and pepper, then rub with the rosemary and grated garlic. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the pork and cook, turning, until browned all over, about 6 minutes. Transfer the pork to a small baking sheet (reserve the skillet) and roast in the oven until cooked through, 10 to 12 minutes. Remove to a cutting board. Let rest 5 minutes, then slice against the grain.
  • Meanwhile, add the remaining 1/2 tablespoon olive oil to the reserved skillet; heat over medium-high heat. Add the red onions and a big pinch of salt and cook, stirring occasionally, until softened and lightly browned, about 6 minutes. Reduce the heat to medium and add the balsamic vinegar, 1/2 cup water and the sugar. Simmer, stirring occasionally, until the sauce thickens, 8 to 10 minutes; season with salt and pepper.
  • Divide the pork, onions and roasted vegetables among plates. Sprinkle with the parsley.

Steps:

  • Place veggies in a pan with water and vinegar. Bring to a boil and cover. Reduce heat to medium and cook 10 minutes. Remove lid and raise heat back up. Allow the water to boil away and the vinegar to reduce and glaze the veggies, about 5 to 7 minutes. When the vegetables are glazed, to a sweet, rich brown color add butter to the pan. Turn veggies to coat lightly with butter. Season with salt, pepper and serve. Garnish with parsley.
  • For an optional glaze for the vegetables, substitute 1/4 melted butter and 1/4 cup honey for 1/2 cup balsamic vinegar. Follow method as listed.

  • Mix garlic, onion, and chili powders with paprika and salt. Rub mixture all over pork tenderloin.

  • Combine brown sugar, water, balsamic vinegar, soy sauce, and cornstarch in a small saucepan over medium heat. Cook, stirring constantly, until mixture thickens, 4 to 6 minutes. Remove from the heat and set aside.

  • Put all the ingredients apart from the vinegar in a slow cooker - or a very low oven or aga (50degreesC)
  • Let it cook all day - and all night if it needs it - untill the onions are soft and dark brown and reduced. If it is crisping the heat is too high. You may need to stirr it occasionally - but i usually just leave it.
  • Cook for the last half hour without a lid - to help it dry out a bit.
  • Stirr in the balsamic vinegar. Done!
  • I serve this with Lamb or Beef - but I also keep pots of it in the freezer to top homemade bread - or to put on puff pastry with brie.

Steps:

  • Preheat the oven to 450*F.
  • Cut the onions into halves at the equators.
  • Remove the skin and any tough outer layers.
  • Do not cut off the root and stem ends and be careful not to score the layers you don't remove: uncut, the outer layer will better hold the onion together as it roasts.
  • Place the onion halves cut side down in a 9-inch square baking pan.
  • Melt the butter in a saucepan and stir in the vinegar, thyme, salt, and pepper.
  • Pour over the onions.
  • Bake for about 20 minutes, and then turn the onions over and baste them with the pan juices.

  • Pat pork dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook pork (in 2 batches if necessary) along with shallots, turning pork over once and stirring shallots occasionally, until pork is browned and shallots are golden brown and tender, about 5 minutes total. I always just try to keep in mind that there are newbie cooks and try to help by describing everything I can to help.

Juicy Balsamic-Glazed Pork Tenderloin With Garlic and Thyme image

Steps:

  • Preheat oven to 375 degrees.
  • Trim any excess fat, and rinse pork under cold water, set on paper towels and pat dry.
  • Season all sides with salt and pepper to your own taste.
  • Heat oil in large frying pan over medium-high heat. Get the pan nice and hot!
  • Place pork into pan, and brown/sear on all sides, don't forget the ends. About 2-3 minutes per sides, if your pan is very hot. Check so you don't burn it or under sear it.
  • Remove pork from pan and set on a plate.
  • Turn down heat to medium, and add the balsamic vinegar.
  • Using a plastic spatula, scrape any bits off of the bottom of the pan, that's the good stuff!
  • Stir in dark brown sugar (can sub regular brown sugar, but dark is better), using spatula and keep scraping the bottom and stirring the sauce constantly. Don't worry, it's very easy.
  • Do this for about 2-3 minutes til sauce has reduced and is thickened a little. Just don't do it too long, because it still has to bake and you don't want to end up with burnt tar to roof your house with!
  • Turn heat off.
  • Place pork back into the skillet and turn several (4-5) times to coat/glaze all sides, ending with it bottom-side up.
  • Sprinkle bottom side evenly with 1/4 teaspoons (half) the thyme, using your fingers crushing it as you sprinkle.
  • Sprinkle with half the garlic powder, (1/4 teaspoons also).
  • Place pork, newly seasoned-side down into (greased) shallow roasting or baking dish.
  • Now season the top the same way.
  • Pour remaining glaze over pork.
  • Let rest 10 minutes, and keep re-glazing with the sauce in the pan. (Just tilt the pan and spoon it over.).
  • Place in oven and roast for 30-35 minutes. (35 if slightly larger).
  • Remove from oven, loosely cover with foil, and let rest for 10-15 minutes.
  • This gives you time to heat up that corn or green beans!
  • Remove pork from baking dish to platter, slice and plate.
  • Stir pan juices and pour over slices. (Don't scrape the bottom or any super thick parts, though, just mostly the juices).
  • And serve! :).
  • *Tip: If wanting to serve roasted potato wedges with this, bake them right along with the roast (seperate dish!) for 45 minutes uncovered. It will all get done at the same time with the resting time of the pork! HTH! :).

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, and salt and pepper, to taste, and stir to combine.
  • For the pork: Slice the tenderloin into 1-inch thick medallions (rounds). Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Steps:

  • Preheat the oven to 425 degrees.
  • Cut the onions in half lengthwise, leaving the skins on.
  • In a 12 inch oven proof skillet, heat the oil until smoking.
  • Place 4 onion halves cut side down in the skillet.
  • Cook without moving them, over medium heat, until dark golden brown, 7 to 8 minutes.
  • Add the vinegar and place the skillet in the oven.
  • Bake until the onions are soft, 15 to 20 minutes.
  • Remove the onions from the pan immediately.
  • Place cut side up on a cool plate.
  • Pour the syrup that has formed in the pan over the onions and cool to room temperature.
