Parmesan-Roasted Green Beans image

Steps:

  • Preheat the oven to 400 degrees F.
  • Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Lift the beans out onto a platter and serve.

  • Cook 4 ounces diced pancetta in a saucepan until slightly crisp. Add 2 cloves minced garlic, one 14-ounce can crushed tomatoes and 1 cup water; bring to a boil.   • Steam green beans until tender-crisp, about 8-10 minutes. Remove and drain. Meanwhile, mix bouillon and water; stir to blend. Heat small heavy-bottomed skillet (I use cast iron). Pour in bouillon mixture, Balsamic, and garlic salt. Blend. When bubbling, add green beans and cook until liquid is absorbed and beans have a nice nut brown glaze, about 10 minutes. Sprinkle with Parmesan and serve.

  • Place green beans in microwave safe dish with the butter. Cover and cook on high for five minutes.
  • Add vinegar and parmesan cheese. Cook on high five more minutes (covered).
  • Stir to make sure the beans are well coated with the vinegar mixture.
  • Serve and enjoy!
  • These would work well with fresh green beans too. You would just need to adjust the cooking time.
  • Ingredient amounts can be adjusted to suit your taste. I will sometimes increase the parmesan cheese and use 2 tablespoons of butter.

  • Combine the beans with enough water to cover in a saucepan.
