Banana Date Flaxseed Bread image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. Use an electric coffee grinder or food processor to grind 1/2 cup flax seed; set aside.
  • In a large mixing bowl, beat together banana, oil, sugar and eggs. In a separate bowl, mix together flour, baking powder, baking soda, salt, ground flax seed and 1/4 cup whole flax seed. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into prepared loaf pan.
  • Bake in preheated oven for 55 to 60 minutes, or until a toothpick inserted into the loaf comes out clean.

  • Place 1/2 cup flax seeds in a blender, and process until ground to measure 3/4 cup flaxseed meal.
  • Set flax seed meal aside.
  • Preheat oven to 350°.
  • Beat the banana, sugar, oil, and eggs at medium speed of a mixer until well-blended.
  • Lightly spoon flour into dry measuring cups, and level with a knife.
  • Combine flour, flaxseed meal, 1/4 cup flax seeds, baking powder, baking soda, and salt, and gradually add to sugar mixture, beating until well-blended.
  • Stir in chopped dates.
  • Spoon the batter into an 8x4-inch loaf pan coated with cooking spray.
  • Bake bread at 350° for 55 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack, and remove from pan.
  • Cool completely on wire rack.
  • Serve and enjoy!

  • 1. Preheat oven to 350. Beat the banana, sugar, oil, and eggs at medium speed of a mixer until well blended. Lightly spoon flour into dry measuring cups,a nd level with a knife. Combine flour, flaxseed meal, 1/4 cup flaxseeds, baking powder, baking osda, and salt, and gradually add to sugar mixture beating until well blended. Stir in chopped dates. Spoon the batter into an 8x4 inch loaf pan coated with cooking psray. Bake bread at 350 for 55 minutes or until a wooden pick inserted in center comes out clean.   • Preheat oven at 350°F
  • Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
  • Mix together flour, flaxseed meal, sugar, baking powder, baking soda and salt in a bowl.
  • In a separate bowl, beat together eggs and oil.
  • Add dry ingredients and mashed bananas alternately to egg and oil mixture, stirring until dry ingredients are moistened. Pour into prepared pan.
  • Combine topping ingredients and sprinkle over batter in loaf pan. Pat down firmly into batter or swirl topping into batter with knife.
  • Bake 55-60 minutes.
