  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange potatoes and garlic cloves in a 9x13-inch pan. Drizzle with oil and sprinkle with salt and pepper.
  • Bake in the preheated oven until potatoes are tender and garlic cloves are soft, 30 to 40 minutes.
  • Remove from the oven. Squeeze garlic cloves to release roasted garlic onto the potatoes; discard garlic skins. Mix potatoes and garlic together.

  • Heat oven to 425.
  • Wash potatoes, cut into slices 3/8" thick.
  • Wash potato slices again to remove starch, drain.
  • Place potatoes in bowl, add garlic butter, salt, pepper, and all but 2 Tbls parmesan cheese.

  • Position a rack in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes with 1 tablespoon olive oil, the cumin seeds, 3/4 teaspoon salt, and pepper to taste. Spread in a large baking dish and roast until the potatoes begin to brown, 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic and cook, stirring frequently, until lightly golden, about 2 minutes. Remove from the heat and stir in the brown sugar, lemon juice and red pepper flakes.   • In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low and cook uncovered for 5 minutes, or until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook in the oil.
  • Meanwhile, place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender. With a slotted spoon, remove the potatoes from the water, reserving the cooking water, and remove the garlic from the oil, reserving the oil.
  • Process the potatoes and garlic through a food mill fitted with the medium disk.   • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.

  • Bring the water to a boil, cover the pan, and lower the heat.

Steps:

  • Place potatoes in a large greased roasting pan. Combine the butter, garlic, salt, pepper and paprika. Drizzle over potatoes; toss to coat. , Bake, uncovered, at 375° for 30-35 minutes or until tender, stirring several times. Sprinkle with parsley.

Steps:

  • Preheat oven to 450 degrees. Cut potatoes into 1-1/4" wide wedges. Combine potatoes, garlic, oil, and rosemary in 8-inch square baking dish. Season generously with salt and pepper. Roast until potatoes are tender and crusty, stirring occasionally, about 45 minutes. Discard garlic; serve potatoes hot.

3/4 lb red potatoes
6 unpeeled large garlic cloves, flattened
1 tablespoon olive oil
1/4 teaspoon dried rosemary, crumbled
salt & freshly ground black pepper, to taste

  • Preheat oven to 400 F or 200 C. Peel potatoes and cut into small cubes. About 2 cm or a little under 1 inch cubes. Wash the starch off and give them a shake to get excess water off. Then place in a mixing bowl.
  • Add the minced garlic, olive oil, salt and pepper, and your chosen herbs or spices and give it a good stir to have the potatoes well coated.
  • Spread on a baking tray and bake for about 25 - 30 minutes until golden brown. Halfway through baking, use a spatula and turn the potatoes over so they brown and crisp evenly. When done, serve hot.
