EASY BANANA FRENCH TOAST

This is a simple and quick way to use those still good but aesthetically non-pleasing week-old bananas. I like to use a less dense, lighter bread with this recipe, like normal sandwich bread.

Easy Banana French Toast image

Steps:

  • Mash the banana in a shallow bowl with a fork; mix it until most lumps disappear.
  • Scramble both eggs into the bowl along with the spices and vanilla extract.
  • Preheat a griddle or frying pan.
  • Use cooking spray or butter.
  • Dip slices of bread in mixture and transfer to pan.
  • Cook both sides until done.

Texas French Toast Bananas Foster image

Steps:

  • Batter: In a large bowl, combine all of the ingredients until a smooth batter is formed.
  • Sauce: In a saucepan over medium-high heat, melt the butter, then add the brown sugar. Stir continuously until the sugar has dissolved. Add the cinnamon and orange juice and bring to a simmer. Remove the pan from the heat, pour in the rum and creme de banana, if using, then return the pan to the heat. Brush down the sides of the pan with water using a pastry brush. Remove from heat.
  • In a small saute pan, add 1/4 cup of the caramel sauce and the bananas. Saute over high heat until just warmed through. Keep warm.
  • Toast: Preheat a griddle or a nonstick pan over high heat. Dip the bread slices into the batter, then put them on the griddle, turning over after 2 minutes. To each serving plate, add 1/4 cup of the caramel sauce and top with the French toast. Spoon the bananas, over the toast and drizzle with some of the caramel sauce.

1/4 teaspoon pure vanilla extract
1/4 teaspoon orange-flavored liqueur (recommended: Grand Marnier)
1/8 teaspoon sea salt
1/8 teaspoon ground cinnamon
1 cup unsalted butter
2 cups packed brown sugar
1/4 teaspoon ground cinnamon
1/2 cup orange juice
1/4 cup dark rum
1 tablespoon creme de banana liqueur, optional
3 bananas, peeled and sliced
6 thick bread slices, preferably French toast bread (brioche) or Texas toast

Peanut Butter and Banana French Toast image

Steps:

  • In a small bowl, lightly beat the egg and vanilla together.
  • Spread 1 tablespoon of peanut butter on top of each slice of bread. Place the banana slices on top of one of the slices of bread. Place the other slice of bread on top of the first, to make a peanut butter and banana sandwich.
  • In a skillet or frying pan, melt the butter over medium heat. Dip the sandwich into the egg mixture and place in the heated skillet. Cook until brown on both sides. Serve hot.

  • Place all ingredients except bread in a blender and mix well.
  • Pour batter into a shallow dish.
  • Dip each bread slice into batter for several seconds, coating both sides.
  • Place bread in a buttered non stick skillet and cook over medium heat until golden on both sides.

When bubbling, dip bread into egg-banana mixture, one piece at a time, to coat well. Place in pan. Continue with as many pieces as will fit in one pan without over crowding. Pan fry for 2-3 minutes per side or until golden brown. Transfer to oven on a pan to keep warm if desired. Skip this and warm up in the microwave for 45 seconds before serving if preferred. Repeat with remaining slices. Serve with your favorite toppings.
