CLEAN BANANA OAT COOKIES

Flour-free and sugar-free cookies naturally sweetened with bananas. You can have great cookies for breakfast or any time of the day without any guilt! A little bonus for me was that my 11-year-old brother loved these, even after they had been in the refrigerator!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mix mashed bananas, milk, egg, honey, and vanilla extract together in a bowl. Stir in oats, cinnamon, baking powder, and salt.
  • Spoon batter into mounds on the baking sheet, spacing them a few inches apart.
  • Bake in the preheated oven until top looks dry and edges are golden, about 15 minutes.

BANANA OAT COOKIE BARS

I tried playing around with a few recipes, and this is the one that worked out the best for my family. It's a light cookie; I found that making it into bars worked better for me, since I only had one hand and could not spoon them onto a cookie sheet. I also used a food processor to mix the batter to make it quicker and easier to do while holding my daughter. :)

Steps:

  • Preheat oven to 375°F.
  • Grease an 8x9 (for thicker bars), or a 13x9x2 (for thinner bars) pan.
  • Slice up bananas (makes it easier to mix).
  • Mix butter, shortening, egg, and bananas until creamy.
  • In a separate bowl mix flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
  • Slowly add the dry mix to the creamy mix until blended.
  • Mix in the oats.
  • Pour mix into pan.
  • Bake 10 minutes.

Now my children like them as much as I did, and we quadruple the recipe to serve our large family.   • Preheat oven to 375°. In a bowl, combine the first 6 ingredients; beat in butter until mixture resembles coarse crumbs. Add egg, bananas and oats; mix well. Stir in chips and nuts. , Drop by tablespoonfuls onto greased baking sheets. Bake until golden brown, 13-15 minutes. Cool on wire racks.
