BANANA SPLIT CAKE BARS
I got this recipe form my mother-in-law. Bananas, crushed pineapple and maraschino cherries are all baked into a cake. A light, buttery frosting is applied, and the cake is cut into bars for snacking.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, mix together the flour, sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the crushed pineapple, eggs, oil, bananas and 1 teaspoon vanilla. Stir in the cherries. Mix well and pour into prepared pan.
- Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Frost cake while still warm.
- To make the frosting: in a medium bowl, combine melted butter, 1 teaspoon vanilla and confectioners' sugar. Beat in milk, one tablespoon at a time, until desired consistency is achieved.

You didn't hear it from us, but Banana Bars with cream cheese frosting will fly off the plate, so make sure to save yourself a few before serving them.

- Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
- Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
- Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
- Mix flour, sugar, bananas, oil, applesauce, pineapple, eggs, cinnamon, baking soda, and salt together in a large bowl until blended. Pour into the prepared loaf pans.

- 1. Beat the sugar and oil together well. Add the eggs and beat, just until combined. Next, stir in the bananas, coconut, and pineapple. Finally, stir in all of the dry ingredients, combining well.
- 2. Grease and flour a 13x18 jellyroll pan. Pour the batter into the pan and bake for 30-35 minutes at 350 degrees. Do not overbake. Cool completely, before frosting with the recipe below or a cream-cheese frosting.
- 3. For the frosting: In a heavy-guage saucepan, combine the flour and milk. Heat to boiling, stirring constantly, until the mixture forms a very thick paste. Be careful not to scorch it. Cool completely - ok to put in the refrigerator for this to happen more quickly.
- 4. Once the mixture is cool, cream the butter and sugar. After that, add the milk and flour paste a little at a time, beating thoroughly after each addition. Keep beating, until the frosting is creamy/fluffy. Finally, add the vanilla.

- Combine graham cracker crumbs and melted margarine, and pat into bottom of 9x13-inch pan.
- In medium, non-stick saucepan over medium heat, combine remaining margarine, confectioners' sugar, eggs, corn starch and vanilla. Bring to a boil, stirring frequently. Continue stirring, reduce heat and simmer 8 to 10 minutes. Let cool, then spread over crust.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
