BANANA PROTEIN MUFFINS

I thought this was a very good recipe. I couldn't tell there was no sugar in the muffins. When I made this recipe I used the 4 tablespoons of the protein powder. I got this recipe from Obesity Help. It was posted by thekingskid.

Banana Protein Muffins image

Steps:

  • Bake at 400 degrees.
  • Grease muffin tins with Pam spray. Combine flour, Splenda, baking powder, baking soda, salt & cinnamon and mix together. In a bowl, beat egg whites with a wisk or fork. Stir in mashed banana, applesauce, nuts and milk. Add flour mixture and mix together. Spoon into muffin tins.
  • Bake for 20-25 minutes. Stick a toothpick in the center of muffin to be sure cooked thru. Cool in pan for 5 minutes then remove and cool on a wire rack.

Steps:

  • Preheat oven to 350 degrees.
  • Mix everything except the cereal and nuts in a blender. (Note: recipe does not state exact amount of cinnamon or vanilla - 1/2 teaspoon is a guesstimate).
  • Fold in the cereal and mix well.
  • Line a muffin tin with aluminum cupcake liners and spray with non-stick cooking spray.
  • Pour the muffin batter evenly into each tin and top with the nuts.
  • Bake for 30 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 15 muffin cups or line with aluminum foil liners.
  • Mix oats, bananas, peanut butter, eggs, flax meal, almond flour, yogurt, agave nectar, vanilla extract, stevia, cinnamon, maple-flavored extract, baking powder, and baking soda in a stand mixer or food processor until batter is smooth. Fill each muffin cup 3/4-full with batter.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 25 minutes. Cool muffins in the muffin cups for 5 minutes before transferring to a wire rack to cool completely.
