My staple go-to recipe for overripe bananas! The key to super moist muffins is to mix the batter until only just combined, and not to over bake.

- Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
- Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
- Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
- Divide batter evenly among the muffin cups.

- Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
- In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together like you mean it, for a good 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Mix in the dry ingredients just until incorporated. Fold in the nuts and the mashed bananas with a rubber spatula. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
- Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.

This is a great recipe for all banana lovers. It's really easy, and also very variable. I add chocolate, walnuts, oats, or whatever I have lying around and it always comes out good. - In a large bowl, combine the flour, baking soda, and salt. Then stir in your cup of chocolate chips, walnuts, etc.
- In a separate bowl cream together the butter and sugar. Add the eggs one at a time, and don't forget the vanilla!
- Add the mashed bananas and wet mixture to the dry mixture, stirring until moist but lumpy.
- Fill 12 prepared muffin cups (greased or paper cups) 3/4 full of batter. For a special touch, I sometimes sprinkle oats on top.

These are the only banana muffins I make now. I add chocolate chips to my batter and triple the recipe. These freeze great. I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". (Prep time is a guess.)

- Preheat oven to 350°. Prep. muffin tin, with butter/spray or liners.
- Melt Butter in Microwave for 30 seconds. Meanwhile, in a meduim mixing bowl, mash your banana.
- Then in the same bowl add; sugar, brown sugar,milk, melted butter, egg. Then cream together.
- Once creamed, add Baking Soda, Salt, and flour. Mix well.
- Then fill the muffin tins 3/4 up, and place in the middle of the rack.
- Let them bake for 17 minutes, or until middle comes out clean with a knife.
