Steps:
- Sift flour, baking powder and cinnamon into a bowl.
- Rub in butter.
- Stir in sugar, banana, and enough milk to form a sticky dough.
- To make the sauce, combine all the sauce ingredients in a saucepan.
- Stir over a low heat, without boiling until the sugar has dissolved.
- When it has dissolved bring to the boil, without stirring and then reduce the heat to a simmer.
- Drop tablespoons of dough mixture into the simmering sauce and simmer them, covered, for 15 minutes or until they are cooked.
- Serve the dumpling with the toffee sauce.

- Peel and slice your bananas in small pieces.
- In a bowl, mix flour, milk, sugar, beaten egg, baking powder and oil as directed.
- Mix well until you get a thick mixture.
- Slide all your chopped banana pieces into this mixture.
- Take a deep frying saucepan or wok. Make sure you heat about half a cup of oil to the saucepan so the dumplings fry well.
- Keep the stove on medium to high heat.
- Using a tablespoon or wooden spoon, pick each banana piece from the bowl and pour directly into the hot oil. A little bit of the mixture will spread around the banana piece and that's good.
- Turn each dumpling after 1-2 minutes of deep frying so both sides are done well.
- As soon as the dumplings are golden brown, drain them on paper towel and serve hot with tea or coffee!

This creamy banana dessert is our very favorite version, piled high with layers of just-ripe bananas, rich vanilla pudding and tender cookies. We used vanilla bean paste instead of extract in our homemade filling for a bold flavor boost and topped the pudding with swirls of freshly whipped cream. When it all comes together, it's dreamy, luscious and feeds a crowd!

- Bring the milk to a simmer in a large saucepan over medium heat, then remove from the heat. Meanwhile, whisk the sugar, cornstarch, egg yolks, vanilla paste and salt together in a medium bowl.
- While whisking, slowly add about 1 cup of the warm milk to the egg mixture. Pour the egg mixture back into the saucepan, whisking constantly. Continue to cook over medium heat, whisking constantly, until the mixture comes to a boil. Lower the heat to maintain a simmer and cook until thickened, 3 to 5 minutes. Remove from the heat and whisk in the butter.
- Transfer the pudding to a large bowl and press a piece of plastic wrap directly against the surface. Refrigerate until cold, about 1 hour.
- Arrange 19 wafer cookies in the bottom of a 4-quart trifle dish. Top with 1 cup pudding, then arrange 2 sliced bananas on top. Repeat the layers ending with bananas.
- Add the heavy cream, confectioners' sugar and a pinch of salt to the bowl of a stand mixer fitted with a whisk attachment. Beat on medium-high speed until stiff peaks form, about 2 minutes.
- Spread the whipped cream over the pudding and sprinkle the crushed wafer cookies around the border. Refrigerate until the pudding is firm, at least 2 hours or up to overnight.
SOUTHERN BANANA DUMPLINGS
I've seen other types of banana dumpling recipes, but this is the version that we grew up with from my Gramma. This was always a favourite of the grandkids.

- Preheat oven to 350 degrees. In a 9-by-13-inch baking dish, combine the sugar and water. Add the butter and place in the oven to melt the butter.
- Meanwhile, place the flour in a mixing bowl. Use two knives or a pastry blender to cut in the shortening until the mixture resembles coarse crumbs. With a fork, stir in just enough milk or buttermilk until the dough leaves the side of the bowl.
- Turn dough onto lightly floured surface and knead 2 or 3 times, then use a rolling pin to roll out to 1/4-inch thickness. Use a 3-inch cutter to cut 24 rounds. Place a piece of banana in the center of each biscuit, then pull the dough around the banana and pinch the ends to seal on top.
- When the butter is melted, remove the pan from the oven and stir until the sugar completely dissolves.
- Place the banana dumplings, sealed side down, in the syrup. Sprinkle with a little sugar and return to the oven.
- Bake until golden brown, 50 to 60 minutes.

If you like banana cream pie, you'll absolutely love baked banana pudding. Not only is there no pie crust to mess with, but I think the vanilla wafer cookies pair even more perfectly with the fruit and custardy pudding. We want the bananas to match the texture of the custard-soaked cookies, so make sure you buy them a week beforehand. Other than that, not much can go wrong with this simple Southern classic.

- Separate eggs, placing the whites in the bowl of a stand mixer and the yolks into a saucepan.
- Add sugar, salt, and 1/3 cup plus 1 tablespoon flour to the yolks. Splash in about 1/4 of the milk and start blending mixture with a whisk. Pour in remaining milk and whisk until smooth.
- Cook and stir mixture over medium heat until hot to the touch, occasionally dipping your finger in to test. Whisk constantly until custard is thick enough to form ribbons.
- Remove custard from heat and add vanilla extract, banana liqueur, and cold butter. Whisk until butter dissolves. Set custard aside.
- Preheat the oven to 400 degrees F (200 degrees C).
- Toss banana slices with lemon juice.
- Spread a quarter of the custard over the bottom of a baking dish. Add a single layer of vanilla wafers. Cover with 1/2 of the bananas and spread 1/2 of the remaining custard on top. Add another layer of vanilla wafers, using slightly fewer this time. Top with the remaining bananas and custard. Smooth the top and tap dish against the counter to settle the pudding.
- Add cream of tartar to the egg whites. Beat using the whisk attachment until foamy. Gradually add sugar and beat until stiff, but not dry, peaks form. Spread meringue over the pudding using a soft spatula, creating ridges for contrast.
- Bake in the preheated oven until meringue is nicely browned, 7 to 10 minutes. Serve warm or chilled.

- In a large saucepan, mix sugar, flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. - Mix pudding according to package directions.
- let stand while you slice the bananas. I use an egg slicer to get nice even slices, not to mention it goes so much faster.
- add sweet condensed milk to pudding mixture and mix very well.
- add cool whip and mix well.
- Layer wafers, sliced bananas then pudding in a punch bowl. I usually get 3-4 layers but it depends on how thick you make them, its totally up to you.
- Let stand overnight or at least 4-6 hours so it really gets that banana flavor.
- You can use more or less wafers depending on your taste and i always add the top layer just before serving so that they are still crisp. You can get creative with the wafers and really make a nice presentation.

- Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper.
- In a medium size mixing bowl, sift together flour, baking soda and salt. In a separate small bowl, combine 2 tablespoons brown sugar with cinnamon, set aside.
