Steps:

  • Preheat oven to 450°.
  • Rub chicken all over with lemon pieces. Put lemon pieces inside chicken cavity.
  • Rub chicken with salt and pepper.
  • Combine butter, red pepper, garlic and coriander. Smear over the chicken.
  • Roast for 15 minutes. Reduce oven temperature to 375° and roast until juices run clear, approximately 1-1 1/2 hours.

1 (4 -5 lb) whole chickens

Steps:

  • Rinse and dry the chicken pieces and put them into a shallow glass dish.
  • Put the allspice, peppercorns, and cinnamon stick into a spice grinder and grind to a powder. To a full sized blender add the onion, peppers, scallions, garlic, scotch bonnet, thyme, lime juice, olive oil, butter, and ground spices. Blend to a puree; add some water if it is too thick. Pour this over the chicken, cover, and refrigerate for at least 4 hours or overnight. Remove the chicken from the refrigerator 1/2 hour before you cook it.
  • Heat the oven to 375 degrees F.
  • Put the remaining 3 tablespoons oil in a large, oven-proof saute pan over medium-high heat. Remove the chicken from the marinade and season it with salt. Brown the chicken on both sides, then place the pan in the oven and roast until the chicken is cooked through, about 20 minutes. Serve garnished with cilantro leaves.

Steps:

  • For the Sauce:
  • In a food processor, combine onion, red pepper, Scotch bonnets, papaya, and garlic and pulse to chop.
  • Transfer the finely chopped ingredients to a saucepan. Add lemon juice, malt vinegar, white wine, dry mustard, water, and sugar. Bring to a simmer over low heat. Cook slowly until the mixture is thickened, about 30 minutes. Remove from the heat and stir in the yellow mustard.
  • For the chicken:
  • Preheat the oven to 400 degrees F.
  • Season the chicken well with salt and pepper on both sides. Place in a baking dish. Drizzle with olive oil and toss with thyme. Bake until the chicken is just cooked through, about 20 minutes.
  • Remove from the oven.
  • Cuban Bread:
  • While the chicken is cooking, prepare the Cuban bread. Preheat a sandwich press or 2 cast iron skillets, 1 a little larger than the other. Slice the bread in 1/2 horizontally. Spread both cut sides with butter. Press the cut side together and place in the sandwich press. Close and toast until golden brown and the butter is melted. If using skillets, place the bread in the larger skillet. Top with the smaller, heated skillet and cook until both sides are golden brown and the butter is melted.
  • Preheat the broiler.
  • Brush the sauce on the chicken, coating well. Place in the broiler and broil until the sauce bubbles and starts to brown. Remove from the heat and serve with cuban bread, black beans, and yellow rice. Garnish with thyme sprigs.

  • Preheat oven to 400°F. Mix coating mix and peel in shaker bag or on plate. Coat chicken as directed on package. Arrange in single layer in shallow baking pan.
  • Bake 40 to 45 minutes or until chicken is cooked through. Meanwhile, peel bananas; cut in half lengthwise. Dip in orange juice, then roll in brown sugar until evenly coated on all sides.

HERB ROAST CHICKEN

This is more about a technique for roasting chicken than the herbs involved. You could slather nearly any combination of butter and flavourings on top of your bird, using fresh or dried herbs, but it's the roasting in stages that results in the combination of wonderfully tender meat and crisp skin. This is slightly adapted from Hugh Fearnley-Whittingstall's MEAT cookbook and the temperatures given are for a fan oven. Obviously if your bird is bigger or you don't have a fan oven you will have to make small adjustments in the times and temperatures.

Herb Roast Chicken image

Steps:

  • Take any string or trussing off the bird and set in a roasting tray.
  • Spread out its legs from the body so hot air can circulate around the bird and help it to cook more quickly.
  • In a bowl, mix the butter, fennel and garlic along with a bit of salt and pepper.
  • Mix well with your hands and then slather all over the bird's skin as well as a bit inside the cavity.
  • Sprinkle the onions or leek around the bird.
  • Place the chicken on the centre rack of a hot oven, about 210 C for 20 minutes.
  • Baste the chicken and then turn the oven down to 180°C.
  • Pour the wine in the roasting pan and return the chicken to the oven for 40 minutes.
  • For the last phase, turn the oven off, leave the door slightly ajar and let the chicken rest for 20 minutes.
  • By this time, you should be able to see clear juices if you pierce the chicken where the thigh meets the breast.
  • I don't bother making gravy with this: the juices around the bird are flavourful enough on their own.

Steps:

  • Put the chicken in a bowl, add the marinade spices and yogurt with ½ tsp salt and mix well. The chicken can be left to marinate for a few hours, or cooked straight away - leaving it to marinate will make it more tender.
  • Melt the ghee in a non-stick frying pan. Fry the chicken for 5 mins on each side until golden. Remove from the pan and transfer to the bowl, leaving the ghee in the pan.
  • Keep the pan on the heat and scrape it to release any caramelised bits stuck to the bottom. Add the bay leaves, cinnamon and cardamom pods and fry until they start to smell aromatic. Add the onions and garlic, followed by the ginger and 1-1½ tsp salt. Stir, cover and cook until soft and translucent, about 8-10 mins.
  • Stir in the rest of the spices and fry over a low heat for 5-8 mins. Add 200ml water, cover and cook for a further 3-4 mins, or until the ghee separates from the masala (it should be bubbling around the edges of the pan).
  • Add the chicken back to the pan, including any meat juices. Spoon some of the masala over the chicken and cover. Cook for a futher 10-15 mins or until the chicken is cooked through. Stir through the sliced green chillies and chopped coriander and serve immediately.
