THAI SPICY BASIL FRIED RICE

This is a great use of leftover rice. It's important to use Thai sweet basil to get the authentic Thai restaurant taste. And don't skip the fish sauce, it smells strong in the bottle, but it blends in nicely with the other ingredients when it's all put together. Also, make sure you use chilled rice, or you'll end up with mush.

Thai Spicy Basil Fried Rice image

Steps:

  • Whisk together oyster sauce, fish sauce, soy sauce, and sugar. Set aside.
  • Spray a wok or large frying pan with olive oil spray and heat over medium-high heat.
  • Add the garlic and chili (or serrano) peppers and stir fry for 30 seconds.
  • Add the red pepper and onion and stir fry until the onion is translucent. If using chicken or beef, add it with the the onion and red pepper. Cook until chicken is done, or beef is about medium.
  • Push ingredients in the wok/pan aside and quickly scramble the egg.
  • Add the oyster sauce mixture and stir everything together.
  • Raise the heat to high and add the chilled rice. Stir until blended with the sauce and other ingredients, breaking up clumps of rice with the back of a spoon.
  • Add more soy, oyster, or fish sauce, if necessary (or to taste).
  • When everything is blended together and rice is hot, remove from heat and stir in the basil.
  • Garnish with cilantro, if desired.

  • In a wok or skillet, heat oil until hot but not smoking.
  • Add garlic and chilis and fry until garlic is light brown.
  • Add mushrooms and onions and stir quickly.
  • Add cooked rice; stir thoroughly.

  • At the very end, stir in basil leaves and immediately turn into a serving bowl.

Basil Fried Rice with Quail Eggs, Green Papaya Slaw and Thai Sausage image

Steps:

  • Cook the rice in a 4-quart saucepan of boiling salted water with the lemongrass, shallot, kaffir lime leaf, and garlic, stirring occasionally, until tender, about 10 to 15 minutes. Drain the rice and discard the lemongrass, shallot, lime leaf, and garlic.
  • Heat the vegetable oil in a large skillet over medium high heat. Add the ginger and shallot. Cook, stirring frequently, until the mixture is translucent. Add the cooked rice, soy sauce, fish sauce, Thai basil, mint leaves, and cilantro and toss until well combined. Add the lime juice and adjust the seasoning, if necessary.
  • In a large skillet or on a plancha (griddle) on high heat, sear the sausage in olive oil on all sides until cooked through.
  • Heat a nonstick skillet over high heat and add enough oil to thinly coat the bottom of the pan. Cook the quail eggs sunny side up.
  • For each serving, spoon basil fried rice onto the bottom of 6 warm plates and slide a quail egg on top. Place a spoonful of green papaya slaw on the side and arrange two sausages on top. Garnish the plate with a few drops of harissa sauce and a sprinkle of peanuts, and serve hot.
  • In a small pot, combine the sugar, garlic, lime juice, and fish sauce and simmer until the sugar is dissolved. Let the mixture cool completely.
  • In a nonreactive bowl, combine the papaya, scallion, cilantro, chile, and lime juice mixture. Toss to combine the ingredients and refrigerate, covered, for at least one day before serving.

Steps:

  • In a bowl wash the rice well in several changes of cold water and drain it in a sieve. In a small saucepan combine the rice, the salt, and 3/4 cup water and simmer the mixture, covered, for 18 minutes, or until the water is absorbed. Transfer the rice to a large bowl and let it cool for 10 minutes.
  • In a wok or heavy skillet heat the oil over high heat until it is hot but not smoking and in it stir-fry the ginger for 10 seconds, or until it is fragrant. Add the rice, the peas, the corn, the carrot, and the scallions and stir-fry the mixture for 1 minute. Add the Worcestershire sauce and the vinegar and stir-fry the mixture for 1 minute, or until it is hot. Stir in the basil and salt and pepper to taste.

  • In a mortar, pound garlic and chili, set aside. You can use a food processor or other chopper if you don't have a mortar.
  • Heat oil in pan to medium heat and stir in garlic/chili mix until aromatic.
