- To make relish: add the relish ingredients to the container of a food processor; cover and pulse until coarsely chopped; cover and chill for 2-3 hours.
- To make burgers: stir together the onion, bread crumbs, and bell pepper in a mixing bowl.
- Add the ketchup, horseradish, mustard, salt and pepper to taste; stir to mix.
- Add the ground beef; stir to mix.
- Shape mixture into 4 patties.
- Grill patties over medium heat for 7 minutes; turn and grill 7-11 more minutes or until done.
- Top patties with a slice of cheese during the last 2 minutes or grilling time.
- Serve patties on toasted whole wheat buns with red sweet pepper relish and fresh basil leaves.

PERFECT SUMMER BASIL BURGER

- Quarter the beef into even portions. Form into burgers, indenting the middle slightly with your thumb. Season with salt and pepper, and brush lightly with vegetable oil. Cook on a hot grill until charred on the outside and pink on the inside, about 4 minutes per side. Two minutes before removing the burgers, top the burgers with the mozzarella cheese.
- Place the toasted muffins on a serving platter. Place the tomato slices on the bottom, and top each with cooked patties. Spread a tablespoon or two of the basil sauce on each bun top and sprinkle with a little Parmesan cheese. Serve extra basil sauce on the side for dipping.
- Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.

- Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
- In a food processor, pulse together the garlic, sun-dried tomatoes, basil, cheeses, tomato paste, red pepper flakes, salt, and pepper. Process until blended. Transfer the mixture to a large bowl. Add the beef and, using a wooden spoon or clean hands, stir until combined. Form the mixture into 8 (4-inch diameter) patties, each about 3/4-inch thick. Grill each side until cooked through, about 5 minutes. Allow to rest for 5 minutes.
- Brush the cut side of the rolls with olive oil and grill until lightly toasted, about 1 minute.
- Place the burgers on the bottom half of the rolls and add desired toppings. Add the top half of the rolls and serve.

YUMMY BASIL BURGERS
This recipe is a great twist on the classic recipe for hamburgers, and they smell great on the grill. These burgers could also be made on the stove or on a small indoor grill. I got this recipe out of the local newspaper. My boyfriend loves hamburgers so this caught my eye. This recipe is so easy and dinner is ready in about 10 minutes. We were very pleased with the flavor and juiciness the burgers had. I'd call it the burger's sophisticated older brother! For a quick, inexpensive meal using staple ingredients, this is a nice change from a regular hamburger.

- Preheat the outdoor grill for high heat.
- In a bowl, mix the ground beef/turkey, Worcestershire sauce, basil, garlic salt, and pepper. Form the mixture into 4 burger patties. Lightly oil the grill grate and cook burgers about 6 minutes, turning once, to an internal temperature of 160°F or to desired doneness.

- Preheat oven to 400°F. Peel off the outer papery layer of the garlic bulbs. Cut off the top third of the bulbs, exposing the tops of the cloves. Place a sheet of foil on a flat surface; place bulbs in the middle of the foil. Drizzle bulbs with the 1 tablespoon olive oil; fold foil up and over to form a packet. Roast garlic in the oven for 30 to 35 minutes or until soft and cloves are pulling away from papery covering. Cool about 30 minutes or until garlic is cool enough to handle.
