GRILLED BASIL-MARINATED CHICKEN

Grilled Basil-Marinated Chicken image

Steps:

  • Whisk together the oil, vinegar, basil, onion, salt, peppercorns, and garlic in a bowl. Transfer the marinade to a gallon-sized sealable plastic bag with the chicken and shake to combine. Refrigerate for at least 3 hours and up to 12 hours.
  • When ready to cook, build a charcoal fire or preheat gas grill.
  • Remove chicken from the marinade. Grill the chicken, turning once, until browned and just cooked through, about 4 minutes per side. Transfer the chicken to a platter and garnish with the basil sprigs.

Basil Parmesan Pasta Sauce image

Steps:

  • In a nonstick skillet, saute garlic in oil until tender. Stir in flour, salt and pepper until blended (mixture will be thick). Gradually add milk, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; gradually stir in Parmesan cheese and basil until cheese is melted. Serve over pasta.

This is a great marinade for chicken or fish. If possible, purchase a whole piece of Parmesan, and grate it just before using. It really does make all the difference. If using dried herbs,be aware that they are stronger than their fresh counterparts. If using dried basil, you will need 2 tablespoons.
