Steps:
- Heat oil in heavy medium skillet over high heat. Add banana and sauté until golden, about 1 1/2 minutes. Using slotted spoon, transfer banana to paper towels to drain. Add onion to skillet; sauté 3 minutes. Add beans, cilantro, cumin, and cayenne; cook until mixture is hot, about 3 minutes. Using back of fork, mash bean filling to coarse paste; season with salt and cool.
- Preheat oven to 425°F. Roll out each puff pastry sheet on floured surfaceto 14-inch square. Cut each into 9 squares. Place 1 heaping tablespoon filling in center of 12 squares (reserve remaining squares for another use). Sprinkle each mound of filling with cheese, then top with bananas, dividing equally. Brush edges of squares with glaze. Fold 1 corner over filling to opposite corner, forming triangle. Using fork, seal crust edges. Arrange on rimmed baking sheet; brush with glaze. Bake empanadas until golden brown, about 15 minutes. Serve hot.
BEAN AND BANANA DIP
This is an Ecuadorian recipe which I got from the book, "South American Cooking". The author suggests that it is good for tailgate parties. Unusual and maybe even a little "weird", but one of those combos that surprises you with how good it is. This would halve easily if you're not feeling daring and would rather make a smaller quantity. :)

SPICY BANANA DIP WITH BLACK BEANS
I was looking for something savory to make with bananas and found a banana dip recipe online. I adjusted it by adding black beans. It comes across like a creamy chutney and the black beans give it texture. It's great with corn chips. A nice alternative to salsa.

QUICK AND EASY 7-LAYER BEAN DIP
My brother and I make this all the time when people come over, and its usually the first thing gone. Its a fairly straightforward layered bean dip that you can throw together in minutes with readily available ingredients. Truth be told, if you count there are only 6-layers to this dish, the original recipe called for a layer of salsa and a layer of onions, we've combined and simplified (and bettered in my opinion) these two layers with pico de gallo. But since nobody has really questioned it, we've never called it anything else.

Steps:
- Mix together the re-fried beans and taco seasoning and spread evenly in a 9" x 13" baking dish (or similarly sized serving dish).
- Mix together the sour cream and cream cheese and spread over-top beans.
- Add the next layers: pico de gallo, shredded lettuce & cheese.
- Garnish the dish with chopped green onion and bell pepper and serve with a large bowl of chips.
EASY 3-INGREDIENT BEAN DIP
This dip has only 3 ingredients, but tastes much more complicated. Try experimenting with all the yummy cheese blends available now. Serve with tortilla chips, and serve alongside salsa.
