QUESO BAKED NACHOS
I modified a nachos recipe I found, and my family loves it! It is now a regular at all of our parties or any time we're craving nachos. -Denise Wheeler, Newaygo, Michigan

Steps:
- Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring occasionally., In an ungreased 13x9-in. baking pan, layer a third each of the following: chips, beans, beef mixture and queso dip. Repeat layers twice., Bake, uncovered, until heated through, 10-15 minutes. Top with tomatoes and, if desired, chives; serve immediately with sour cream on the side.

- Preheat oven to 350°. Mix beans, tomatoes and jalapenos. Arrange chips in an even layer in a 15x10x1-in. pan. Top with bean mixture and cheese., Bake, uncovered, until cheese is melted, 10-12 minutes. Serve immediately with toppings as desired.

I created this trying to use left over refried beans from Recipe #272760, submitted by Larry in DC. Served with Tortilla chips in front of a football game - it was a HIT!!

- Chop your veggies and drain and rinse beans if using canned. For vegetarian nachos feel free to use extra beans/veggies or use leftover cauliflower walnut taco filling like I did here. For T-Rex nachos, warm up or cook your choice of taco meat (salsa chicken, pulled pork, and seasoned ground beef/turkey all work here) - nachos are a great way to use up leftovers!
- Top baking sheet with your tortilla chips and sprinkle with half the grated cheese. Next add your beans/meat of choice and top with remaining cheese. Bake on the center rack until cheese is melted and choice of protein and beans are heated through. 5-10 minutes.
- While the nachos bake, make the cheese sauce. Freshly grate your cheddar (pre-shredded cheese won't work here) and measure out all ingredients. This queso comes together fast!

- Off heat, place all ingredients in a medium saucepan and stir to combine well. Be sure cornstarch is fully dissolved. Turn heat on medium and stir until mixture is completely melted and smooth. Adjust seasonings to taste, if needed. If needed, thin out sauce with a splash of milk and whisk to incorporate.
- Keep sauce warm to serve (a small fondue pot or occasional microwaving/stirring will do the trick.) Sauce will thicken some as it cools but should remain soft.
