Steps:
- Cut French Loaf into 1 inch pieces diagonally.
- Mix all ingredients together.
- Cut swiss cheese in 1/2 diagonally.
- On each side of bread, spread mixture and place one 1/2 slice of cheese in between the pieces of bread.
- Cover Bread with foil and bake for about 45 minutes at 325.

BEAU MONDE SEASONING REPLACEMENT
The Beau Monde Seasoning that I've used has a very basic yet tasty flavor. The substitution recipes I've seen so far online and here have called for cinnamon, cloves and other things that I know I don't taste from the Spice Islands jar. As I kept looking I came upon this one that sounded like it might be the one. I haven't tried it yet but thought someone else might get some use out of it. It calls for sea salt AND seasoned salt. I probably would adjust those so it wouldn't turn out too salty. Also I might try using celery salt instead of the combination of seeds and salt. This recipe only makes 1 tsp. worth of mix but it's a good starting point.

BEAU MONDE SEASONING - CLOSER TO THE REAL THING!
There are so many strange concoctions out there for Beau Monde Seasoning that I was just baffled when I needed it and couldn't buy it (or make it from those weird recipes). After some research - this is the recipe I came up with. It *IS* the closest recipe to Beau Monde Seasoning I can find anywhere on the net (primarily because there IS no close recipe anywhere on the net)?!?!? This is so simple I don't know why everyone is getting it wrong. Beau Monde Seasoning contains: Salt, dextrose, onion, celery seed, and silicon dioxide. Salt is self explanatory - dextrose is the The dextrorotatory form of glucose which is derived from starch. (Effectively, it's a type of sugar..slightly heavier than meat which can be absorbed in to the meat tissue. Onion and celery seed are the primary flavors we are trying to accomplish here... the silicon dioxide is used as a flow agent and/or moisture absorbent...so toss a few grains of rice in your bottle! For the Dextrose (unless you wish to purchase powdered dextrose, which is available in some health food/sports stores) we will use either powdered sugar or caster sugar. The amount I'll list is simply to my taste -- certainly feel free to start with less and adjust it to suit your own tastes. We'll use Onion powder and Celery salt to accomplish 3 of the 4 major ingredients.

I had never heard of Beau Monde spice blend until I got the recipe for recipe#123626 which I have posted. I found this chicken which utilizes Beau Monde so I thought I'd post it too. It was submitted in a garden club cookbook by the President of the Evening Garden Club in Hamden, CT.

- Coat chicken breasts in flour and seasoning.
- Brown on both sides lightly in butter in a skillet.
- Place browned chicken in a baking dish; add pan drippings and 2 tablespoons water.

- Saute mushrooms in 3 tablespoons of the margarine and remove the mushrooms; set aside.
- Add remaining margarine to the skillet and saute the chicken until brown.
- Sprinkle with Beau Monde seasoning while browning.

- Simmer over low heat for 30 minutes or until tender.
- Remove chicken to a serving platter.
