Norwegian Waffles image

Steps:

  • Preheat a waffle iron.
  • Beat together eggs and sugar with an electric mixer until fluffy. Pour in shortening, milk, salt, and vanilla; mix until well blended. Sift together the flour and baking powder. Mix the flour into the liquid.
  • Spoon 2/3 cup of batter onto the preheated waffle iron at a time. Close the iron and cook until steam no is no longer coming out and waffle is browned.

Overnight Belgian Waffles image

Steps:

  • The night before, combine the water, yeast, and sugar in a very large bowl (the batter will expand enormously). Allow it to stand for about 5 minutes, until the yeast dissolves and the mixture has started to foam, which tells you the yeast is active. Stir in the milk, butter, honey, vanilla, and salt. Add the flour and whisk until the batter is smooth. Cover the bowl with plastic wrap and allow it to sit overnight at a cool room temperature.
  • The next morning, heat a Belgian waffle iron according to the manufacturer's instructions and brush the top and bottom with melted butter. Beat the eggs together with the baking soda and whisk them into the batter until combined. Pour just enough of the batter onto the hot waffle iron to cover the grids (1/3 to 1/2 cup each, depending on your waffle maker), close, and cook for 5 to 6 minutes on medium heat, until the waffles are golden brown. Cut them apart with a small knife, if necessary, and remove them with a fork. Repeat the process until all the batter has been used. Serve the waffles hot with sliced bananas, toasted coconut, maple syrup, and creme fraiche and let everyone help themselves.

BEBA'S NORWEGIAN WAFFLES

This is my great-grandmother's waffle recipe. I think there are several floating around the family, but this is the one that my parents had. It makes a lot of waffles, so unless I'm cooking them for some sort of event of get together I often cut the recipe in half or save some of the batter in the refrigerator to make some fresh ones in the next day or two. We never eat Norwegian waffles like regular waffles. Sometimes we eat them in the morning, but usually they are made as a dessert or for when people come over for coffee, for a snack, etc. Also, we never eat them with syrup. They are always eaten with some combination of butter, sugar and jam (raspberry, lingonberry). Usually I just eat them plain. At my husband's request, I use 1 tsp. cardamom as well as 1 tsp. vanilla, but you could use only the cardamom or only the vanilla if you have no cardamom. I never make them without cardamom- I think that's the best part! *the servings number listed is a guess- I've never counted! I'll have to update it. The cooking time is also a guess because it depends on your waffle maker. I guessed 30 minutes if you made all of the waffles. Enjoy!

Beba's Norwegian Waffles image

Steps:

  • Whisk eggs, sugar and butter (I use my Kitchen Aid).
  • Add vanilla, cardamom, baking powder, salt and milk and mix.
  • Thicken gradually with flour.
  • Cook in waffle iron until golden brown. The waffle iron that should be used is one that makes thin, heart shaped waffles, like the Villaware heart waffle maker. However, you could probably use anything that's not a Belgian waffle maker.

Steps:

  • Spray a Belgian waffle iron with cooking spray and preheat according to manufacturer's instructions.
  • Beat eggs with a whisk until fluffy. Beating slightly after each ingredient, first add milk, then oil, sugar, salt, baking powder, all-purpose flour, and finally whole wheat flour; do not overbeat.
  • Pour 3/4 cup batter into the center of the hot waffle iron, spreading with a metal knife if necessary. Close the iron and bake until it stops steaming, 2 to 5 minutes, depending on your iron. Carefully remove cooked waffle with a fork and repeat with remaining batter.

BESTEMOR'S NORWEGIAN WAFFLES

This recipe is not for the calorie conscience people. My Bestemor used to make these in a waffle maker that she would open with a pickle fork. We wouldn't DARE eat them with syrup (as they're sweet enough) however, we would eat them with home made strawberry jam. The aroma of cardamom is amazing. If I want to get my children out of bed - I simply make a batch of Bestemor's waffles.
