BEEF ROAST WITH CRISPS

This recipe came from a Medieval Feasts cookbook I read years ago -- yes, we had a medieval feast, and it was really interesting. The batter over the meat is almost "pre-Wellington," and the "Crisps" are the little bits of batter than fall off the roast and cook in the stock.

Beef Roast With Crisps image

Steps:

  • Preheat oven to 350.
  • Mix flour and cinnamon.
  • Heat oil in Dutch oven. Dredge roast in flour/cinnamon mixture, and sear until nicely browned.
  • Drain off oil.
  • Mix together the basil, rosemary, thyme, and fruit, and arrange around the meat. Sprinkle sugar or honey over fruit.
  • Pour stock around the fruit, being careful not to pout it directly on fruit.
  • Cover tightly and bake until tender, approximately 3 hours.
  • Remove from over and cool for 30 minutes. While roast.
  • is cooling, make crisp batter: Mix all ingredients for batter together.
  • Raise oven heat to 450.
  • Pour batter over top and sides of roast and bake in oven 5-10 minutes, until batter coating is browned.

  • In small bowl, combine sour cream, horseradish and mustard; blend well. Place 1 roast beef strip on each Melba round. Top each with about 1/2 teaspoon sour cream mixture. Sprinkle each with parsley. Arrange on serving platter.

Ale-glazed beef fillet with a crispy onion crust image

Steps:

  • To make the glaze, whisk all the ingredients together in a saucepan. Bring to the boil and simmer for 25-30 mins to reduce until sticky. Meanwhile, crush the onions with a pestle and mortar, or blitz in a food processor until you get a fine crumb.
  • Heat the oven to 180C/160C fan/gas 4. Generously season the beef all over. Heat the oil in a frying pan over a high heat and spend 10 mins searing the beef well on all sides. Remove from the pan (setting the pan aside to cook the carrots later), then sit the beef on a wire rack in a roasting tin. Brush all over with some of the glaze, roast for 10 mins, then turn it over and do the same again, reserving some of the glaze for brushing over at the end. If you want the beef rare and you have a meat thermometer, the core temperature should be 52C. For medium-rare, roast for another 10-15 mins - the core temperature should be 55-60C. Cover the beef and let it rest for 15-20 mins.
  • Meanwhile, boil the carrots in salted water for 5-7 mins until just tender, then drain. Tip the carrots into the frying pan you used to sear the beef along with the butter and fennel seeds. Fry over a medium heat until golden, then add the spinach, any resting juices from the meat and 1 tsp of the beef glaze. Cook until the spinach has wilted.
  • To serve, scatter the crispy onions on a tray or plate. Brush the beef again with the glaze and roll it in the onions. Sit on a board, carve into thick slices and serve with the carrots and spinach.

Raw vegetables, such as carrots and potatoes, may be added at the start of the cooking time, if desired. My whole family loves this recipe. The leftovers also make great roast beef sandwiches.

Steps:

  • Heat oil in a non-stick pan over a high heat. Add beef and cook for 10 mins until browned all over, then remove from pan. Cook onion for 7 mins until softened. Stir through mushrooms, then cook for 3 mins more until golden. Stir in tomato paste and flour and cook for 1 min more. Pour in wine and beef stock, bring to a simmer. Add beef back to pan. Cook, uncovered, over a gentle heat for around 2 hrs until meat is really tender, topping up with water if needed. Pour mixture into a 2 litre baking dish.
  • Heat oven to 190C/fan 170C/gas 5 and bring a pan of lightly salted water to the boil. Cook the potatoes for 10 mins until beginning to soften. Cool under a running tap, then coarsely grate. Sprinkle over the beef and dot with butter. Pop in the oven and cook for 30 mins until the crust is nice and crispy.
