PRESSURE COOKER BEER-BRAISED PULLED HAM
To jazz up leftover ham, I cooked it with a beer sauce. Buns loaded with ham, pickles and mustard are irresistible. -Ann Sheehy, Lawrence, Massachusetts

- In a 6-qt. electric pressure cooker, whisk together beer, 1/2 cup mustard and pepper. Add ham and rosemary. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 20 minutes. When finished cooking, allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure., Remove ham; cool slightly. Discard rosemary sprigs. Skim fat from liquid remaining in pressure cooker. Select saute setting and adjust for high heat. Bring liquid to a boil; cook for 5 minutes., When ham is cool enough to handle, shred meat with 2 forks. Discard bone. Return ham to pressure cooker; heat through. To serve, place shredded ham on pretzel bun bottoms with remaining mustard and, if desired, dill pickle slices. Replace tops.

Steps:
- Soak brown and yellow mustard seeds with dark beer in a large bowl set in the refrigerator for 24 hours. If the seeds soak up the beer too quickly, add more beer.
- Transfer the soaked mustard seeds to a food processor along with garlic, apple cider vinegar, brown sugar, salt, and black pepper. Pulse until desired consistency is reached.
- Sterilize the jars and lids in boiling water for at least 5 minutes.
- Pack the mustard into the hot, sterilized jars, filling the jars to within 1/4 inch of the top.
- Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles.
- Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Refrigerate the jars of mustard for 2 weeks before using.

BEER MUSTARD
Steps:
- Bring the stout to a simmer in a small saucepan and cook until reduced by half. Stir in the brown sugar; when melted, remove the saucepan from the heat. Allow to cool, then mix in the mustard and cinnamon until well blended. Serve with pretzels.

Steps:
- Heat oil in pressure cooker ( medium).
- Brown beef on both sides, then remove and set aside.
- Add to same pan: small amount of beer and loosen/stir up bits.
- Add flour and tomato paste to pan and cook over medium for one minute.
- Place the meat and everything else ( and the rest of the beer ) in the pan.
- Close this lid and cook on high pressure for about 1 hour.
- Let pressure come down naturally.
- Serve over rice or noodles.

- Mix the coriander, dry mustard, salt, pepper, and garlic powder in a small bowl; rub the mixture over the thighs, coating them evenly and thoroughly. (IF POSSIBLE - do this ahead of time and set them covered in the refrigerator for up to 8 hours. It's not absolutely necessary, but it really amplifies the spices!)
- Pour the beer into a 6-quart Instant Pot (electric pressure cooker); nestle the thighs into the beer.
- Set the machine to cook at high pressure for 45 minutes by hitting Manual and adjusting the time setting. (My Instant Pot has a "manual" setting so I just used this.)
