CHEESY FIESTA BEEF CASSEROLE

- In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Stir in beans, picante sauce and chili powder., In a bowl, combine soup, tomatoes and green chiles. In a lightly greased 2-1/2-qt. baking dish, layer half the chips, beef mixture, soup mixture and cheeses. Repeat layers., Microwave on medium-high, uncovered, until heated through and cheese is melted, about 12 minutes. If desired, top with avocado and sour cream.

- In a skillet, brown ground beef and onion over medium heat; drain. Add the water, taco seasoning and tomato sauce; mix. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in macaroni, chilies and 1-1/2 cups of cheese. Pour into a greased 1-1/2-qt. baking dish. Sprinkle with the remaining cheese. Bake at 350° for 30 minutes or until heated through.

MEXICAN FIESTA CASSEROLE

- 1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
- 2. In a large skillet, heat the oil over medium-high heat. Add the turkey and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water, and the corn. Simmer until thickened, about 2 minutes, then stir in the black beans.
- 3. Spread 1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa, and spoon half of the meat mixture on top. Cover with 3/4 cup of the salsa and 1 cup of the shredded cheese. Top with 4 more tortillas and the remaining 3/4 cup salsa. Scatter the remaining 1/2 cup shredded cheese over the top.
- 4. Bake the casserole until the cheese is melted and bubbling, about 25 minutes. Slice and serve, topped with scallions and sour cream.

- Heat oven to 350°F. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.
- In ungreased 2-quart casserole, place broken tortilla chips. Top with beef mixture. Sprinkle with onions, tomato and cheese.

MEXICAN FIESTA BAKE
This recipe is a favorite of my whole family; even the child who hates meat. I like to experiment with different cheeses or different salsas. I think there are supposed to be 6 servings in this dish but because everyone has seconds it serves 5 with no leftovers. For more servings increase to 1 1/2 lb beef and increase corn bread to 2 boxes and cheese accordingly. Bake in 9x9 or larger casserole dish.

- Brown ground beef, and drain excess fat.
- Add water, taco seasoning, and salsa.
- Cook for 15 minutes or until water is reduced.
- Place beef in small casserole dish.
- Sprinkle with 1/3 cup of cheese.
- Mix corn bread according to package directions and add remaining cheese.
- Mix.
- Spread corn bread on top of beef.
- Bake at 400 degree for 20 minutes or until corn bread is golden brown on top.

- Preheat oven to 350. Grease/spray a 13" x 9" casserole dish; set aside.
- In a bowl, stir together the cottage cheese, sour cream and chopped green onions.
- In a large skillet, brown/crumble ground beef with onion, green pepper and garlic. Drain and return to the skillet.
- Add to the skillet, tomatoes, Black beans, tomato paste, water and seasonings. Simmer for about 10-12 minutes, stirring occassionally.
- Scatter HALF of the coarsely crushed chips on the bottom of the prepared casserole dish.
- Top with HALF of the beef/bean mixture.
- Top with HALF of the cottage cheese/sour cream mixture.
- Sprinkle with HALF of the shredded cheese.
- Repeat all the layers again, ending with the last of the shredded cheese. Sprinkle top with black olives (optional) and reserved chopped dark green onion parts (optional).
- Bake at 350 for 25-30 minutes or until heated through.
- Divide shredded lettuce on plates and spoon casserole over top to serve.

FIESTA TACO CASSEROLE
This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat.

- Pre-heat oven to 350.
- Cook turkey over medium heat 8-10 minutes, until no longer pink. Drain if necessary. Stir in beans and salsa and heat to boiling.
- Place tortilla chips in the bottom of an ungreased 8x8 casserole. Top with turkey/bean mixture. Spread with sour cream, then top with onions, tomatoes, and cheese.

This makes a very large casserole dish -- so is especially good to take to potlucks and large gatherings. I have never tried to cut the recipe in half -- but I'm sure it could be done without any problem. (I believe I have the size of the Jiffy Corn Muffin Mix right -- they are the small boxes)

- Brown meat and onion until meat is no longer pink. Drain any excess fat.
- Add taco seasoning, water and salsa. Simmer 5 to 6 minutes until thickened but not dry.
- Add corn and olives.
- Spoon into an ungreased 3 1/2 to 4 quart casserole dish.
- Prepare Corn muffin mix according to instructions on box. Add cheese and chopped green chilies.
- Spread over meat mixture.

Steps:
- Brown ground beef in large skillet on medium heat, drain,then add taco seasoning,2/3 cup water,and 1/4 cup chopped cilantro, reduce heat and simmer for 3 minutes.
- While ground beef is cooking, sprinkle hash browns into a casserole dish and spread 1/2 cup sour cream over hash browns. Then sprinkle 1/2 cup shredded cheese over the sour cream.
- Cover with the ground beef mixture,then add the black beans and corn. Bake at 400 degrees,in preheated oven,for 15 minutes or until heated through.
