Ohio-Style Beer Cheese image

Steps:

  • Melt the butter in a medium pot over medium heat. Whisk in the flour and saute for 1 minute. Stir in the garlic and cook for about 1 minute. Whisk in the beer and mustard and cook, stirring, for a few minutes until the mixture begins to simmer and thicken. Whisk in the grated cheese a little at a time. Once all the cheese has been added, continue to cook, whisking, until the sauce is smooth and just beginning to bubble, another 5 to 7 minutes. Whisk in the heavy cream and season with salt and pepper. Transfer to serving bowl and serve with soft or hard pretzels.

  • Cut a large hole in the top of the loaf of bread to form a bowl; set onto a serving platter.
  • Melt the cream cheese in a large saucepan over medium heat; stir in the Cheddar cheese, mozzarella cheese, beer, and garlic salt; heat, stirring continually, until all the cheese is melted; pour the hot cheese mixture into the bread bowl.

  • Beat cream cheese in a medium bowl until smooth. Add ingredients in the following order, mixing with the beater after each one: sour cream, Cheddar cheese, beer, jalapeno peppers, garlic powder, onion powder. Cover and refrigerate until flavors have blended and dip has thickened, at least 2 hours.
  • Remove from the refrigerator 15 minutes before servings.

Steps:

  • In a medium saucepan over medium heat, add butter and when melted, add flour. Whisk until the roux turns golden, about 1 ½ minutes.
  • Pour in beer slowly whisking constantly. Add milk, mustard, Worcestershire sauce, smoked paprika and garlic powder. Whisk until the mixture is smooth and thickens, about 2 ½ to 3 minutes.
  • Add cheese and whisk continuously until melted. Taste and if needed, add salt and freshly ground black pepper.
  • Add hot sauce and bring the mixture to a simmer; cook for a few minutes until the sauce thickens.
  • Serve warm with tortilla chips, pretzels, crackers or veggies. Yields 2 ½ cups.

  • In food processor, blend cheddar, cream cheese, beer, worcestershire, chili powder, mustard, red pepper, and garlic.
  • Blend for 5 minutes, or until creamy.
  • Add in parsley, blend 1 more minute.
  • Pour into bowl, cover, and chill in refrigerator.
  • Cheese will firm.
