CROQUE BIG DADDY

Croque Big Daddy image

Steps:

  • Preheat a grill pan over medium-low heat.
  • In a medium saucepan over medium heat, add the 3 tablespoons butter, jalapeno and seafood seasoning. Cook until the jalapeno begins to soften, about 3 minutes. Next, add the flour and stir to combine and make a blond roux, about 3 minutes. Add the milk and season with salt and pepper. Stir in the Gruyere and mozzarella and turn the heat to low. Cook for 2 minutes, and then cover to keep warm.
  • Place the ham on the grill and cook until well marked and warmed, about 2 minutes per side.
  • Spread 1 tablespoon softened butter on one side of the bread slices and place on the grill, about 2 minutes. Spread the remaining 1 tablespoon softened butter on the other side and flip, cooking about 2 minutes more. Evenly divide the cheese sauce on 4 slices bread and top with 1 slice ham. Place the remaining 4 bread slices on top to create a sandwich.

Big Daddy Parfait image

Steps:

  • In a small bowl, mix orange zest, sugar and coconut. Set aside.
  • In large 2-quart dish or big martini glass start assembling parfait by layering granola, yogurt and then fruit, bananas, strawberries, blackberries and blueberries. Repeat until all is layered. Sprinkle coconut mix over fruit.
  • In a large bowl, fold pineapple into whipped cream and put a scoop on top of each serving. Garnish with mint.

Steps:

  • Preheat oven to 425 degrees F.
  • Slice cheese into 5 (1/4-inch thick) slices, then cut the slices in half again, lengthwise.
  • Butterfly hot dogs lengthwise. Place 2 cheese slices inside the slit and close hot dog. Wrap a slice of bacon tightly around the hot dog, covering the entire surface.
  • Place on a greased baking sheet and bake for 10 minutes or until bacon is crisp. Remove from oven allowing grease to drain for a minute on paper towels. Place a hot dog into each bun and serve.

Big Daddy's Spicy Beef Patty image

Steps:

  • Preheat the oven to 400 degrees F.
  • Brown the ground beef in a large saute pan over medium heat. Add the onion, garlic, paprika, thyme, black pepper, and salt. Stir together, and then add the jalapeno. Remove from the heat, and add the bread crumbs and the beef broth. Stir well to combine and set aside to cool completely.
  • In a small bowl, whisk together the egg, curry powder and water. Set aside.
  • On a work surface, flatten the pie crusts and cut out 3-inch rounds using a cookie cutter.
  • Add a hearty tablespoon of the beef mixture onto each round. Fold over and press the edges with your fingers. Crimp the edges with a fork. Transfer the patties to a baking sheet and brush the tops with the egg mixture. Bake in the preheated oven for 30 minutes.
  • Arrange on a serving platter and serve.

Big Daddy's Homemade Pastrami image

Steps:

  • In a coffee grinder, add the peppercorns and coriander and grind until coarsely chopped. Set aside.
  • In a large stock pot add all the brine ingredients and bring to a boil over high heat. Remove from the heat and let cool. Add the brisket to the brine and refrigerate overnight. Remove the brisket from the brine and pat dry. Cover liberally with the spice mixture.
  • Preheat the oven to 300 degrees F.
  • On a sheet pan with a rack, arrange the brisket on the rack and roast until fork tender, about 4 hours. Remove to a cutting board and slice. Transfer to a serving platter and serve.

Hot Dog Stuffed Pretzels image

Steps:

  • For the sauce: In a small bowl, add all ingredients and stir well to combine. Season with salt and pepper and refrigerate until ready to serve.
  • For the hot dogs: Preheat the oven to 450 degrees F. Spray a baking sheet with nonstick spray.
  • Divide the dough into 12 equal pieces and roll each into a long rope about 8 inches long. Wrap each hot dog with 1 ropes, starting at the bottom and twisting it around the hot dog until you get to the top. If there is left over dough, fold it under the hot dog.
  • Dissolve the baking soda into the hot water.
  • Lay each dog on the prepared baking sheet and brush each with the baking soda mixture and then with the melted butter. Sprinkle with sea salt or smoked salt, if desired. Place into the oven and bake until golden brown, 10 to 12 minutes. Serve with the mustard sauce.

Steps:

  • In a large pot with salt, boil pasta for 12 to 15 minutes until cooked. Stir often. Drain and cool. Refrigerate for 30 minutes.
  • In a large pot with a dash of salt, add eggs on medium high heat. Bring to a boil. Cover and remove from heat. Let eggs sit for 6 to 7 minutes. Remove eggs and shock in ice water. Once thoroughly cooled, peel eggs and roughly dice.
  • Place pasta in a large bowl. Add onions, celery, eggs, relish, mayonnaise, salt and pepper, hot sauce and Worcestershire. Mix until well combined.
