Steps:

  • In a medium saucepan, heat oil over medium.
  • Add onion and celery and saute 5 minutes or until tender.
  • Add paprika, garlic and cayenne.
  • Saute 1 minute more.
  • Add ketchup, beer, vinegar and Worcestershire sauce.
  • Simmer, uncovered, on medium-low until slightly reduced and flavors have blended, about 30 minutes.
  • This can be prepared in advance and refrigerated or frozen.

This is the basting sauce my Southern friend used when barbequing a whole pig. It makes a large batch that keeps well, up to 6 months in the fridge. I use it on pork roast, chops and poultry. Marinate the meat of choice and brush it often while grilling.

I like it because you can choose to add things like Italian Sausage, Meat Balls,Veggies and more. you can use over many types of Pasta and other dishes that call for tomato sauce. If you like a little heat with your sauce add cayenne pepper to taste. Have fun and enjoy

Steps:

  • Put Chopped Onion, Green Pepper and Garlic in fairly large pot.Add Olive oil and cook till Tender. Add spices and cook for around 2 minute Stir every so often to mix.add everything that is in a can plus the wine . Stir and bring to a slight boil. Cut back to simmer cover and cook for 2-3 Hours. Add the Tomato Paste cover and simmer for another. Salt and pepper to taste and enjoy.
