I make this birds nest recipe in the spring when the birds are starting to build their own nests. They are so easy to make and disappear just as fast. -Pam Painter, Poseyville, Indiana

Steps:
- In a large saucepan over medium heat, melt butter and marshmallows until smooth, stirring occasionally. Add the peanut butter and chocolate chips; heat and stir for 2 minutes or until smooth. Remove from the heat; stir in chow mein noodles until well coated. , Divide into 12 mounds on a waxed paper-lined baking sheet. Using fingers, shape each into a nest; press an indentation in the center of nest. Fill each nest with three or four jelly beans or candy eggs. Cool.

BIRD'S NEST COBBLER
Summer fruits sing out to be baked in this free form easy to prepare cobbler!

Steps:
- 1. Preheat oven to 350. Wash and prepare fruit. If using peaches, peel, pit and slice peaches in eighths, reserving any juice. If using blackberries, wash and discard debris. **(while fruit is cooking) To a deep cast iron (or heavy, deep dish oven safe dish) add butter and allow to melt in oven. To a large pot add prepared fruit (and reserved juice) and 1/2 c sugar. Allow fruit to cook over medium heat until sugar is dissolved, 7-9 min. Remove from heat and set aside.
- 2. In a medium bowl combine flour, 3/4 c sugar, baking powder, salt and milk. Mix well. Remove skillet from oven, pour batter over melted butter-Do not stir! Pour fruit and any juice over batter-Do not stir!
- 3. Return skillet to oven. Bake 33-38 min. Allow to cool slightly (20-25 min) before serving. This is wonderful served warm with a scoop of ice cream.
CRISPY PEANUT BUTTER BIRDS' NESTS
Marshmallows and rice cereal come together in this decorative nutty dessert - perfect to serve a crowd.

- Spray 24 regular-size muffin cups with cooking spray. In large microwavable bowl, microwave marshmallows and butter uncovered on High 1 minute; stir. Continue to microwave in 30-second increments, stirring until smooth. Stir in peanut butter until blended. Gradually stir in cereal, pretzels and peanuts until well mixed.
- Divide cereal mixture evenly among muffin cups, pressing mixture in bottom and up side of each cup to form nest, using lightly buttered hands. Let stand until set, about 30 minutes.
- Remove nests from muffin cups. Place about 3 malted milk eggs in each nest.

BIRD'S NEST BREAKFAST CUPS
I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. Oh, and don't forget the mimosas!

- Preheat oven to 425 degrees F (220 degrees C). Grease 24 muffin cups.
- Mix hash brown potatoes, salt, black pepper, olive oil, and 2/3 cup shredded Cheddar cheese in a bowl. Divide mixture between prepared muffin cups and use your fingers to shape potato mixture into nests with hollows in the middle.
- Bake in the preheated oven until hash browns are browned on the edges and cheese has melted, 15 to 18 minutes. Remove hash brown nests.
- Reduce oven temperature to 350 degrees F (175 degrees C).
- Whisk eggs and water in a bowl until thoroughly combined; season with salt and black pepper. Pour equal amount of egg mixture into each nest; sprinkle with bacon crumbles and 1 teaspoon Cheddar cheese.
- Bake in the oven until eggs are set, 13 to 16 minutes. Let cool in pans and remove by sliding a knife between potato crust and muffin cup.

- Preheat oven to 350°. In a large bowl, combine sugars, flour, cinnamon and cloves. Add apples and toss to coat. Transfer to a greased 8-in. square baking dish. - Heat a large, dry saute pan over medium heat. Add the almond slivers and toast, shaking the pan every minute, until they are fragrant and begin to darken in areas, 3 to 5 minutes.
- Line two baking sheets with parchment paper. Melt the almond bark in a microwave-safe bowl according to package instructions. Stir in the butterscotch chips. Microwave another 30 seconds, and then stir until smooth.
- Stir in the almonds, pretzels and coconut, coating evenly. Drop the mixture, 1 tablespoon at a time, onto the prepared baking sheets. Nestle in 1 or 2 of the mini eggs. If the mixture starts to cool and become too firm to work with, microwave for 30 seconds and stir gently. Let the nests cool at room temperature until solid.

- In large microwavable bowl, microwave butter and 3 cups of the marshmallows uncovered on High about 2 minutes, stirring after every minute, until smooth. Gently stir in cereal until thoroughly coated.
- Spray 1/2 cup measuring cup with cooking spray. Measure rounded 1/2 cupfuls cereal mixture onto waxed paper-lined cookie sheets. Shape into nest shapes.
- To make the birds, cut feet, beaks and wings out of the taffy candy. Adhere to each of the remaining 9 marshmallows with a small amount of the frosting. Cut tops off orange slice candies; use frosting to adhere on top of each marshmallow for crest. Place 2 miniature chocolate chips on front of each marshmallow with frosting for eyes. Place 1 marshmallow in each of the cereal nests.

- Julienne both the carrots and zucchini in a large bowl with a hand spiralizer. Then thinly slice the onion and baby spinach and toss into the same bowl, along with the eggs, Parmesan cheese, flour, panko bread crumbs, salt, and pepper.
- Toss all the ingredients together using 2 large forks (or use your hands) until well combined. Using 2 forks, scoop a small amount, and transfer onto the baking sheet. Try to swirl and shape the vegetables into a small bird's nest. Try to give each one some depth, adding more on top to avoid them looking flat, like pancakes. Each fork-full leads to about a 3-inch diameter in size.
- Bake for 15 to 17 minutes, or until golden brown on the bottom and crispy around the edges. Keep in mind, if you undercook them, the nests will fall apart. Remove from the oven and use a spatula to transfer to a serving plate. Serve them warm with dipping sauce nearby.
