COWBOY CASSEROLE
Beef, beans and barbecue sauce are topped with biscuits to satisfy hungry cowboy appetites.

Steps:
- Heat oven to 425°F. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
- Stir baked beans and barbecue sauce into beef. Heat to boiling, stirring occasionally. Pour into ungreased 2-quart casserole.
- Meanwhile, in medium bowl, stir Bisquick mix, milk and butter until soft dough forms.
- Drop dough by 12 spoonfuls onto beef mixture.
- Bake uncovered 18 to 22 minutes or until topping is golden brown. Sprinkle with cheese. Bake about 3 minutes longer or until cheese is melted.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking pan.
- Place and press biscuit dough into the bottom of the baking pan and halfway up the sides.
- Bake in the preheated oven until lightly browned, 15 to 20 minutes. Leave the oven on.
- Meanwhile, heat a nonstick skillet over medium-high heat and cook ground beef until browned and crumbly, about 5 minutes. Drain fat. Stir in taco seasoning and water. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 5 minutes. Transfer cooked meat to a bowl and wipe out the skillet.
- Add onion and bell peppers to the same skillet and cook over medium heat until slightly tender, about 5 minutes.
- Combine sour cream, mayonnaise, 1/2 of the Cheddar cheese, and 1/2 of the onions in a bowl.
- Layer browned meat, tomatoes, pepper-onion mixture, jalapeno peppers, and sour cream mixture on top of the prebaked biscuit dough. Sprinkle with remaining Cheddar cheese.
- Bake uncovered in the preheated oven at 350 degrees F (175 degrees C) until cheese is lightly browned and bubble, 30 to 40 minutes.

This is out of Betty Crocker Bisquick weeknight meals October 2005. This is so good--try it with the country bush's baked beans or the honey bush's baked beans it turns out great but different with either one. Cattlemens is the choice barbecue sauce to use in the flavor of your choice, or another good thick flavorful barbecue sauce

Steps:
- Brown ground beef and drain, preheat oven to 425°F.
- Stir baked beans and barbecue sauce into beans heat to boiling while stirring, pour into sprayed 2 quart casserole dish.
- Stir Bisquick mix, milk, and butter until dough forms. Drop by spoonfuls onto beef mixture.
- Bake uncovered 20 minutes until topping is golden brown.
- Sprinkle with cheese and cook about 3 minutes more or until cheese is melted (I like to let the cheese get a little crisp).

- Preheat oven to 350 degrees Fahrenheit. Grease a 9x13-inch baking pan with oil or cooking spray.
- In a large bowl, mix baking mix and 1 cup of water until combined. Spread into the bottom of the greased pan. Set aside.

- Cook green pepper and onion in a skillet over medium heat until the latter is translucent, about 5 minutes. Top mixture over diced tomatoes. Spoon canned diced chilies on top.
