BAKED GARLIC BALSAMIC WINGS WITH BLUE RANCH DIPPING SAUCE

Chicken wings are baked until super crispy and then tossed with a sweet and tangy balsamic-honey glaze and whole cloves of roasted garlic and served with a cool buttermilk-blue cheese sauce for dipping.

Baked Garlic Balsamic Wings with Blue Ranch Dipping Sauce image

Steps:

  • Whisk together the sour cream, mayonnaise, blue cheese, buttermilk, chives and garlic. Season to taste with and pepper. Refrigerate until ready to serve.
  • Preheat the oven to 425 degrees F. Drizzle the garlic heads with 1 tablespoon of oil and wrap in foil. Bake until golden and soft, about 1 1/2 hours.
  • After about a 30 minutes, generously oil 2 rimmed baking sheets. Toss the wings with 2 teaspoons salt and a few grinds of pepper and divide them between the two baking sheets, spreading them in a single layer. Bake until very crispy, about 55 minutes.
  • Squeeze the baked garlic from the heads into a large bowl. Combine the vinegar, honey, thyme, red pepper flakes, 1/3 cup water and 1 teaspoon salt in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer briskly until the liquid becomes syrupy and is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and whisk in the remaining 3 tablespoons of oil. Whisk into the bowl with the garlic.
  • Transfer the baked wings to the bowl with the glaze and toss to combine. Serve with the dipping sauce.

These are awesome! Found this on mealsforyou and couldn't help it and we made this with store-bought chicken wings from the deli at the grocery store. Make sauce the way listed and then baste with sauce while reheating the wings. It takes less than 30 minutes to prepare when using store-bought wings.

Steps:

  • Place chicken wings in large mixing bowl.
  • Combine remaining ingredients in blender or food processor; blend until smooth.
  • Reserve approximately 3/4 cup sauce; cover and refrigerate until ready to serve.
  • Pour remaining sauce over wings, tossing to coat thoroughly.
  • Cover and refrigerate 2-4 hours or overnight.
  • To cook, spray roasting pan with nonstick spray.
  • Shake excess marinade off wings and place in roasting pan.
  • Bake at 450ºF 20-25 minutes, until cooked through and well browned.
  • Remove wings; place on serving platter with bowl of reserved dipping sauce.
  • Sprinkle with chopped parsley.

Hot Blackberry BBQ Chicken Wings image

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine blackberries, ketchup, 1/4 cup water, jalapenos, vinegar, honey, garlic, and liquid smoke in a small saucepan. Stir in lime juice and bring to boil. Reduce heat to medium and simmer, stirring occasionally, for 5 minutes.
  • Mix together cornstarch and 1 tablespoon water in a cup; stir mixture into the sauce. Simmer until slightly thickened and syrupy, about 5 more minutes. Remove from heat and set aside.
  • Toss wings with oil in a large bowl. Season with salt and pepper and toss until evenly coated.
  • Cook wings on the preheated grill, turning occasionally, until cooked through, 20 to 25 minutes.
  • While the wings are cooking, pour sauce through a fine mesh strainer set over a container. Tap the strainer with a spoon while straining to squeeze out the last remaining drops of sauce from the residue.
  • Place grilled wings into a large, clean bowl. Add hot blackberry BBQ sauce and toss until well coated. Serve hot.

  • Fill a large stock pot with water a little over half way and bring it to a boil. Add the sea salt to the water along with the wings. Boil the wings for 10 minutes and drain them in a colander.
  • Now, pat the chicken wings completely dry using paper towels. This is the most important step. You want to make sure they wings are as dry as possible. Transfer the wings to a large sheet pan. Bake the wings for 20 minutes, then flip then and continue to cook for 5 more minutes.
  • While the wings cook, heat the ghee in a small saucepan over medium-high heat and add the garlic and pepper flakes. Sauté the garlic for a minute until its fragrant. Lower the heat to medium and add the blackberry jam, coconut aminos and ketchup to the pot. Stir the sauce and simmer for 3 minutes to marry the flavors and thicken the sauce a bit. Remove the sauce from the heat and set it aside.
