BLAZING BBQ SAUCE OR MARINADE
Steps:
- Combine all ingredients except chicken breasts. Add chicken breasts to marinade mixture and marinate chicken breasts in the refrigerator for 2 to 4 hours before grilling.
- Preheat grill. Place chicken breasts on the grill and cook until chicken is opaque in center, flipping twice during cooking, about 15 minutes total.
BLAZIN' BBQ RUM RAISIN RIBS
It's been a tradition of men on the grill, but I've recently learned how to smoke and grill ribs and I love it!

Steps:
- 1. Rub the ribs with 2 Tbs. olive oil, and then the blackened seasoning to coat well.
- 2. For the sauce: (can be made ahead of time). Heat 2 Tbs. of the oil in a 3-qt. saucepan over med-low heat. Stir in the onion, water, raisins, molasses, ketchup and rum. Continue cooking for 25 minutes, reduce to simmer.
- 3. Gas Grill Method: Oil the grid. Pre-heat grill for indirect cooking to medium heat. Place ribs meat side down on grid. Cook 15 minutes on each side. Remove, baste with sauce only(no raisins) and wrap tightly with foil. Place back on grill and cook for 45 more minutes. Remove foil, cook 10 minutes. Smoker Method: Smoke over hickory at 250 degrees for two hours. Prepare sauce. At the 2-hour mark, remove ribs, baste with sauce only (no raisins) and wrap tightly in foil. Place back on heat and continue to cook for one hour. Remove foil, cook for 30 minutes.
- 4. Drizzle remaining raisin sauce over before serving. Makes two racks.

Steps:
- Heat the oil in a saucepan over medium heat.
- Add the onion, garlic, cumin and chile powder and saute until onions are soft.
- Add the malt vinegar and deglaze, stirring and scraping the bottom of the saucepan to loosen all the brown bits.
- Add the rest of the ingredients and simmer until slightly thickened.
- Transfer to a blender or food processor, and blend until smooth.
- Refridgerate until ready to use, up to 3 days.
