CHARRED STEAK BLT CAESAR SALAD
A mashup of Caesar salad and a BLT -- made even better with the charred flavor from the grill! You won't feel one ounce hungry after eating this hearty salad that was inspired by a dish at Taco Guild, one of my favorite restaurants in Phoenix, Arizona.

Steps:
- Preheat a grill pan over high heat. Remove the steaks from the refrigerator to come to room temperature.
- Lay the strips of bacon next to one another in a large nonstick pan. Place the pan over medium heat and cook the bacon, turning occasionally, until the fat is rendered and the bacon is crisp, 5 to 7 minutes. Remove to a paper-towel-lined plate to drain.
- Put the anchovies, garlic, lemon juice and Worcestershire sauce in the bowl of a mini food processor. Pulse until the ingredients are roughly chopped and begin to come together. Scrape the contents into a small bowl and combine with the mayonnaise. If the dressing seems thick, add water, 1 teaspoon at a time, until smooth and pourable.
- Sprinkle both sides of the steaks liberally with salt and pepper. Place on the preheated grill and cook until charred, 4 to 5 minutes. Flip and cook until an instant-read thermometer reads 135 degrees F for medium-rare, another 4 to 5 minutes. Remove the steaks to a cutting board to rest.
- Meanwhile, trim the brown stem ends of the romaine hearts, leaving the bunch intact. Trim 1 inch off the top of the hearts and discard. Slice the hearts in half lengthwise. Lightly coat each half with olive oil. Place on the grill pan and char each side, about 1 minute. Remove to a serving platter.
- Drizzle with some of the dressing and top with the cherry tomatoes. Crumble the bacon over top. Shave Parmesan on top of the salad with a vegetable peeler and finish with coarsely cracked black pepper.
- Thinly slice the steaks about 1/4-inch thick and fan out next to the salad. Serve with extra dressing on the side.
BLT WITH SPICY PEPPER CREAM CHEESE
Steps:
- Preheat oven to 200 degrees F. Line 2 half-sheet trays with parchment paper.
- Toss tomatoes with olive oil, sugar, salt, pepper and thyme leaves in a large bowl. Spread on a lined half-sheet tray and slow-roast, stirring every hour, until little to no liquid remains and the tomatoes are shriveled and caramelized, about 3 hours 30 minutes. Set aside and raise oven temperature to 375 degrees F.
- Arrange bacon slices side-by-side on a lined half-sheet tray and cook to desired doneness, 20 to 25 minutes for just under crispy. Carefully remove from oven (watch out for hot bacon fat!) and drain on paper towels.
- Slice and toast bagels. Spread 2 tablespoons Spicy Pepper Cream Cheese on each bagel half. Arrange 6 to 8 pieces roasted tomatoes on the bottom halves. Top each with 3 leaves lettuce, torn to fit. Divide the bacon among the top halves, ripping the pieces in half to fit the tops. Close, slice and enjoy. (See Cook's Note.)
- Whip cream cheese in a stand mixer or in a large bowl with a hand mixer until light, about 2 minutes. Add chopped peppers, salt and pepper flakes and mix on low to blend.
BLT CASSEROLE
My husband and I love this recipe. Everyone I have ever served this to has asked for seconds. To speed up prep time the bacon can be cooked in the microwave. I have even reduced this recipe to 1 serving and baked in a mini loaf pan. Sometimes for a little different taste I use shredded mexican cheese in place of the cheddar cheese.

Steps:
- Fry bacon and set aside.
- Scramble eggs and set aside.
- Toast bread and spread with mayonnaise.
- Cut toast into cubes with a pizza cutter.
- Lay cubes in a 8-in square greased baking dish. Try to keep mayo side up.
- Place crumbled bacon on toast cubes.
- Lay american cheese slices on top of bacon.
- Place scrambled eggs on top of the cheese.
- Cover eggs with the diced tomatoes. Set aside.
- In a saucepan, melt butter. Stir in gravy mix until smooth. Graduallly add milk. Bring to a boil: cook and stir for 2 minutes or until thickened.
- Pour gravy over casserole.
- Sprinkle with shredded cheese and onion.
- Bake, uncovered at 325 for 10 minutes.
- Cut into squares; serve on lettuce.

CHICKEN CAESAR BLT SANDWICH
Yummy variation on a basic BLT or club sandwich. Just as nice on untoasted bread if it's nice and fresh. I prefer poached chicken as it stays beautifully moist & tender but you can also use grilled chicken, or leftover BBQ or roast chicken. I usually poach the chicken ahead of time when I'm making breakfast - boil water in the kettle, put it in a saucepan with the chicken and a little chicken stock powder, cover and let it sit in the hot water until lunchtime - it's perfectly cooked, but in no danger of being over-cooked and rubbery. I do hard-boiled eggs the same way (often at the same time in the same pan).

- In a large frying pan over medium heat, cook bacon, turning occasionally, until lightly browned and crisp but not brittle, about 10 minutes. Drain on paper towels.
- Meanwhile, in a blender or food processor, combine mayonnaise, parmesan, lemon juice, mustard, garlic, anchovy, salt, pepper, and Worcestershire. Whirl until smooth. Scrape into a small bowl.
