GRILLED BEEF AND BLUE CHEESE TACOS

Everyone loves the tangy sauce that goes with these sizzling steak tacos. For an authentic feel, I like to wrap the tortillas in foil and steam them while the steak and onions are cooking. -Lois Szydlowski, Tampa, Florida

Grilled Beef and Blue Cheese Tacos image

Steps:

  • Brush onions with oil; sprinkle with 1/4 teaspoon salt. Sprinkle steak with remaining salt. Grill onions and steak, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), and onions are tender, 4-6 minutes per side. Let steak and onions stand 5 minutes., Meanwhile, in a large bowl, combine soy sauce, Worcestershire, brown sugar, vinegar, garlic and pepper. Halve onion slices; cut steak thinly across grain. Add onions and steak to soy mixture; toss to coat. Serve in tortillas with blue cheese.

Steps:

  • In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into about 12 patties.
  • Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

Steps:

  • In a large skillet over medium heat, sauté ground meat, breaking up meat with a spoon, until meat is browned and no longer pink, about 12 minutes. Season with seasoning salt and pepper to taste. Drain off excess fat.
  • To build tacos, divide meat equally among tortillas. Top with blue cheese, Red Onion Salsa and lettuce. Fold tortillas in half. Note: Tortillas maybe warmed in a hot skillet stovetop.).
  • To Make Red Onion Salsa: In a large bowl, combine red onion, onion, lemon juice, lime juice, oil and parsley (or cilantro). Transfer to an airtight container and refrigerate, stirring occasionally, for 1 hour or for up to 24 hours.
