- Preheat the oven to 350 degrees F with the racks in the upper and lower thirds of the oven. Line 2 sheet pans with parchment paper and set aside.
- Add the cheese, flour, butter, salt and BBQ mix to the bowl of a food processor and pulse until the mixture resembles coarse meal. Add the cream and pulse until a ball forms.
- On a lightly floured work surface, roll the dough out to 1/4 to 1/8-inch thick. Cut the dough with a sharp knife into 1/4-inch wide strips. Transfer to the prepared sheet pans, leaving space between them, and bake until golden brown, about 15 minutes. Flip the pans once halfway through the cooking time. Cool completely on the sheet pans.
- BYOC: If your friends are the spicy type, try adding a pinch or 2 of cayenne. If you want to get the kids involved, omit the BBQ spice, have them paint the straws with egg wash before you bake them and add some sesame seeds or poppy seeds.
CHEESE STRAWS

- Preheat the oven to 375 degrees F.
- Roll out each sheet of puff pastry on a lightly floured board until it is 10- by 12-inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1¿4 cup of the Parmesan, 1¿2 cup of the Gruyère, 1¿2 teaspoon of the thyme, 1¿2 teaspoon of the salt, and some pepper. With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.
- Bake for 10 to 15 minutes, or until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don't over bake or the cheese will burn. Cool and serve at room temperature.
HOMEMADE CHEESE STRAWS
Ever since her catering days, Martha has been baking these light-as-air cheese straws. You can buy versions, but nothing rivals cheese straws fresh out of the oven. For a variation, try rolling the puff pastry in poppy seeds, paprika, or sesame seeds.

- On a lightly floured surface, roll out pastry dough to a 9-by-20-inch rectangle. Sprinkle 3/4 cup cheese over center of dough. Starting at the near short end, fold dough into thirds, enclosing cheese. Wrap in plastic; refrigerate 1 hour. Repeat. Wrap in plastic; refrigerate at least 4 hours or overnight.
- Cut dough in half; wrap half in plastic, and refrigerate. On a lightly floured surface, roll out half the dough to a 12-by-15-inch rectangle about 1/8 inch thick. (Do not press too hard on edges.)
- Using a pastry brush, dust off excess flour; brush beaten egg over dough until well moistened. Sprinkle 1/2 cup plus 2 tablespoons cheese and a pinch of salt over lower half of dough. Fold top half over cheese-covered half. Gently press to seal. Brush top of dough with beaten egg; sprinkle with remaining 1/2 cup plus 2 tablespoons cheese and a pinch of salt.
- Trim dough to 12 by 6 1/2 inches with a pastry wheel or knife. Transfer to a baking sheet lined with parchment paper. Refrigerate 30 minutes. Repeat with remaining dough, cheese, and salt.
- Preheat oven to 375 degrees. Using a pastry wheel, cut dough into 3/8-by-12-inch strips; twist into spirals. Space 1/2 inch apart on baking sheets. Press ends onto sheets to prevent straws from straightening. Cover with plastic wrap; refrigerate 30 minutes.
- Bake until golden and cooked through, about 18 minutes. Loosen straws from sheets with a thin spatula; transfer to a wire rack to cool. Store in airtight containers at room temperature up to 1 day.

- Preheat oven to 400 degrees F (200 degrees C). Grease a cookie sheet.
- In a large bowl cream butter and cheese. Stir in flour and salt; mix well. On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into 2 inch strips and sprinkle with ground red pepper. Place strips on prepared cookie sheet(s) 1 1/2 inches apart.

- Preheat the oven to 400 degrees.
- Line several baking sheets with parchment paper or spray with nonstick cooking spray.
- In a small bowl, beat together the egg and water to make an egg wash; set aside.
- In another bowl, toss together the parmesan and blue cheeses; set aside.
- On a lightly floured work surface, roll out each puff pastry sheet into a 14-by-10-inch rectangle.
- Brush both of the pastry sheets to the edges with the egg wash and sprinkle with paprika.
- Sprinkle the cheese mixture over one of the pastry sheets and top with the other pastry sheet, egg wash side down.
- Roll out the pastry with a rolling pin to flatten slightly.
- Cut the pastry in half horizontally with a sharp knife and then lengthwise into 1/2-inch-wide strips.

CLASSIC CHEESE STRAWS

- Unfold the puff pastry sheets on a lightly floured surface. Beat the egg with 1 tablespoon water; generously brush on the pastry sheets (reserve the remaining egg wash).
- Combine the cheddar, parmesan, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Sprinkle the cheese mixture over 1 pastry sheet, then place the other pastry sheet on top, egg wash-side down, lining up the edges. Lightly dust the pastry with flour; firmly press the top sheet down, then roll out the sandwiched pastry sheets into a 10-by-12-inch rectangle.
- Line 2 baking sheets with parchment paper. Cut the puff pastry rectangle in half lengthwise. Cut each half crosswise into 18 strips. CHEESE STRAWS
Southern cheese straws are made with a short crust and cheese dough. Hand-grated cheese is preferred over packaged pre-shredded cheese. If using a cookie press, grate the cheese very finely so it won't clog the press. Make sure the butter is at room temperature but not melted, so it is soft enough to ensure that the cheese and butter mixture will be smooth and not gritty.

- Preheat oven to 375 degrees. Cut the butter into thin pieces, approximately tablespoon-size, and beat with an electric hand mixer in a very large mixing bowl until butter is soft. Add all the cheese and beat with the butter until the mixture is smooth. Stir in the mustard.

- Preheat oven to 300 degrees.
- Make sure cheese and butter are room temperature.
- In a mixing bowl, cream the butter until light and fluffy.
- Add the cheese and mix until blended.
- Add the flour, salt and red pepper (I used 1/2 tsp) this is when you would add dried herbs if using, mix to form a dough.
- Refrigerate for 30 minutes to firm up the dough, then place it in a cookie press, fitted with a ridged tip.
- Pipe the dough in 2 inch strips onto a lightly greased cookie sheet.
- Bake for 10 to 15 minutes or until lightly browned.
- Remove to racks to cool.

- I've discovered these are very tastey using dried herbs also.
- I've made them with dill but can see me making them with thyme and sage before too long.

- Preheat oven to 350 degrees F. Have 2 heavy baking sheets at hand.
- Cut chilled butter into chunks. Combine butter, salt, crumbled blue cheese, cayenne, and flour in a food processor. Pulse until a ball of dough forms. Add egg yolk if the dough does not come together, and process until incorporated.
- Lightly dust a work surface and rolling pin with flour.
- Divide the dough in half. Working with one portion at a time, roll out a rectangle to ¼" thick. Re-dust the rolling pin and work surface as needed. Fold and roll as many times (at least six) as needed to form a tidy 6 X 9 inch rectangle.
- Use a long, sharp knife to score the rectangle of dough, creating 18 straws (approx. 1/2" wide X 6" long). Arrange close but not touching on baking sheets. Repeat with remaining dough.
- Sprinkle lightly with kosher salt. Bake one sheet at a time for 20 to 25 minutes, or until the straws just begin to brown. Transfer to wire racks to cool.
- Store in airtight container.
