HEALTHY BLUEBERRY BREAKFAST SMOOTHIE
A quick recipe I thought up while trying to decide what to eat for breakfast. Great if you are trying to figure out what to do with those blueberries in the fridge or freezer! Also great on-the-go! Delicious and includes many foods that are a great way to start your day! Many of the ingredients, except for the blueberries and yogurt, are optional and vary depending on your own taste. I love cinnamon and a thick, super-cold smoothie. This recipe is super versatile, and you can change it depending on dietary needs or personal preference. Have fun with it!

- Blend blueberries, yogurt, orange juice, sugar, vanilla extract, and cinnamon together in a blender on low speed for 30 seconds; increase speed to high and blend until smooth, about 2 minutes. Add ice and blend on high until smooth, about 1 minute more.

This is the singular reason that I go blueberry picking every year and fill up my freezer! It makes a great light breakfast, snack, or even dessert.

Steps:
- Combine the blueberries, sugar, rum and vanilla bean seeds in a bowl, let sit at room temperature for 10 minutes. Lightly mash the mixture with a fork and let sit 10 minutes longer.
- Put the milk and the blueberry mixture in a blender and blend until smooth. Add the ice cream and blend until smooth. Divide between 2 tall glasses and serve with a straw. Garnish with a few blueberries.

BLUEBERRY BREAKFAST SCONES

- Preheat an oven to 400 degrees F.
- Line a baking tray with parchment paper. Pulse the flour, sugar, baking powder and salt in a food processor, until fully combined. Add the butter and continue pulsing until it is roughly combined. There will still be lumps of butter. Tip the mixture into a bowl, and stir in the 2 eggs and cream with a knife. Gently mix in the blueberries with your hands.
- Turn the dough out onto a lightly floured surface and press it into a 6 by 6-inch square pan. Cut the pastry into quarters, then halve each quarter. Place the pan onto the prepared baking tray and brush the scones with the egg and milk glaze. Bake for 15 to 20 minutes, or until golden. Serve warm with butter, if you like.

- Combine blueberries and blueberry preserves in a small saucepan over medium heat. Bring to a boil and immediately reduce heat to simmer. Simmer until blueberries start to soften and pop, about 5 minutes. Set aside to cool for 15 to 20 minutes (sauce will slightly thicken).
- Beat cream in a large chilled glass or metal bowl with an electric mixer until frothy. Add vanilla extract and sugar gradually, continuing to beat on low speed until soft peaks form. Slowly increase speed to high as cream starts to firm up. Beat until stiff peaks form, 1 to 2 minutes, scraping down the sides of the bowl one time during mixing.
- Spoon equal layers of lemon curd, followed by blueberry sauce, and whipped cream in small dessert glasses. Repeat this layering one more time, and garnish with fresh blueberries and a sprig of mint.
- Move glasses to the fridge, and chill for 30 minutes or longer.
