Steps:
- Combine the blueberries, sugar, lemon juice, vanilla and 3/4 cup water in a blender and blend until smooth. Pour the liquid through a fine-mesh sieve into a 9-inch square glass baking dish, pressing hard on the solids with a spatula before discarding. Freeze the mixture, stirring and crushing up clumps of ice with a fork every hour, until it is frozen, but slushy, about 4 hours total. Spoon into glasses and garnish with the mint or basil leaves.

- Mix cake mix, oil, eggs, cream cheese and vanilla pudding on medium speed (mixture will be very thick).
- Fold in blueberries; pour in Bundt cake pan.

- Icing: Mix blueberry juice and 2 cups confectioners sugar and pour over cake while hot.

THE VERY BEST BLUEBERRY BRAN MUFFINS
This recipe came to me in a newsletter from dairygoodness.ca and boy am I ever glad I tried them. These have to be the very very best muffins I have ever made.

Steps:
- Preheat oven to 375°F Lightly spray muffin pans.
- In large bowl, combine cereal with milk, let stand 10 minutes.
- In separate bowl, combine flour, baking powder, cinnamon, baking soda and salt.
- Whisk brown sugar, egg, molasses and melted butter into cereal mixture.
- Pour over dry ingredients and sprinkle with blueberries.
- Stir just until moistened.
- Spoon into prepared muffin pan. Bake 25 to 30 mins or until tops are firm to the touch.
- Note: to sour milk, spoon 4 tsp lemon juice or white vinegar into glass measuring cup, pour in enough milk to make 1 1/2 cups. Let stand for 5 mins then stir.
- If using frozen blueberries, do not thaw before adding to the muffins.

- Heat oven to 350°.
- In large mix bowl, combine sugar, buttermilk, butter, bananas, eggs and vanilla.
- Beat at medium speed, scraping bowl often until creamy (1-2 min).
- Add flour, baking soda and salt.
- Beat at low speed until moistened (1-2 min.).
- By hand, stir in blueberries.
- Spoon into paper-lined muffin cups.
- Bake for 25-30 min.
- or until toothpick inserted into center comes out clean.
- Remove from pan, cook and sprinkle with powdered sugar.
- Makes 6 Texas-size muffins with a little left over to freeze and bake later.
- When I make these, I just sprinkle granulated sugar on top prior to baking, and omit the powdered sugar.

BEST BLUEBERRY GRUNT
Blueberry Grunt is a very old recipe and can be found in many of the older cookbooks. It is basically berries baked with a sweet dumpling topping, but still a DELICIOUS dessert.

- In a saucepan, combine the berries, sugar, water and lemon juice.
- Heat to boiling and reduce to a simmer.
- Combine the flour, sugar, baking powder and salt in a bowl.
- Cut in the butter.
- Add the milk, all at once and mix only until moistened.
- Drop by spoonfuls into the simmering berries.
- Cover and simmer for 15 minutes.
- DO NOT LIFT THE LID.
- Serve warm with Whipped Cream, Cream or Ice Cream.

- Preheat oven to 350 degrees.
- lightly grease a 9x9 inch square baking pan.
- In a medium sized saucepan combine honey, brown sugar, oil, and cinnamon and bring to a boil. Continue boiling for 2 minutes with out stirring.
- In a large mixing bowl, combine oats and blueberries. Stir in honey mixture until thoroughly blended.
- Spread into the prepared baking pan, gently pressing mixture flat. Bake until lightly browned, about 40 minutes.
- Cool completely in a pan on a wire rack. Cut into 1 1/2 by 3 inch bars.

BLUEBERRY ROSEMARY BRAMBLE

- Add the gin, lime juice, Rosemary Simple Syrup and blueberries to a cocktail shaker and fill with ice. Cover and shake vigorously for 10 to 15 seconds.
- Fill an 8- to 12-ounce glass with ice and strain the cocktail over the ice. Garnish with a rosemary sprig and a few blueberries.
- Add the sugar, rosemary sprigs and 1 cup water to a small saucepan. Bring the mixture to a low simmer, stirring regularly, until the sugar has completely dissolved and the rosemary is fragrant, about 3 minutes.
- Remove from the heat and cool completely. Once cooled, remove and discard the rosemary sprigs.
BLUEBERRY OAT TART

- In a small saucepan over medium heat, combine blueberries, honey, lemon zest and juice, and cardamom and bring to a boil. Let the mixture bubble for 5 minutes, stirring occasionally with a rubber spatula and swirling the pan around. Once it is thick and syrupy and the blueberries have broken down, remove from the heat and allow it to cool to room temperature.
- In a medium mixing bowl, combine the labneh with half of the blueberry syrup. Fold together until combined but still a little streaky.
- Spread the labneh mixture evenly in the oat tart shell, then drizzle on remaining syrup and swirl. Top with chopped toasted cashews, fresh blueberries and a drizzle of honey. Allow the tart to set in the refrigerator overnight or at least 4 hours. Remove the crust from the pan by pressing up the bottom, then transfer to a cutting board. Slice into 8 pieces and serve.
- Toast the oats in a medium, non-stick skillet over medium heat, stirring occasionally until the oats are light golden brown, 8 to 10 minutes.
- Add the toasted oats to a food processor along with the cashews, hemp seeds, brown sugar and salt and blend until very fine, like the consistency of fine breadcrumbs. Add the coconut oil, honey, and vanilla and blend until combined and the mixture starts to form a dough. It'll still look crumbly in the food processor but if you squeeze some in your hand it should stick together. Press into a 14" x 4.5" rectangular fluted tart pan with a removable bottom, spreading it out firmly and evenly. Refrigerate until firm and cold to the touch, at least 1 hour.
- In a mixing bowl, combine yogurt, salt and lemon juice until fully incorporated.
- Line a strainer or colander with 2 or 3 layers of cheesecloth and place over a bowl or other receptacle that can catch the liquid.
- Transfer yogurt mixture to the strainer and twist up the ends of the cheesecloth. Place another bowl on top to weigh down the mixture and then refrigerate overnight, allowing the liquid to drain.

- Preheat oven to 325F and grease and line an 8x8 inch square pan.
- Place oats, blueberries and sugar into a large bowl and stir until combined.
- Add in oil, honey and vanilla extract and stir until all the oats are coated in oil and honey.
- Tip into greased pan and level with a spatula or your (very clean) hands.
- Place in the oven for 30-35 minutes, until lightly golden and it feels slightly crisp to the touch.

- Blend the blueberries and sugar in a food processor until smooth; strain through a fine-mesh strainer, pressing with a wooden spoon to separate the blueberry puree from any chunks of skin or seeds.
- Stir the strained blueberry puree, water, and lemon juice together in a shallow glass baking dish or tray. Place the dish in the freezer; scrape and stir the blueberry mixture with a fork once an hour until evenly frozen and icy, about 4 hours. Scrape to fluff and lighten the ice crystals; spoon into chilled glasses to serve.

BLUEBERRY ALMOND GRANOLA
My kid's school asked that the parents send a snack in for the kids to munch during the day while they do their schoolwork since lunch is so late in the day. I found this tastey treat in a magazine from Penzey's (btw- if your not familiar with them CHECK THEM OUT!!) This is a great little snack for what I needed it for- and I can imagine a hundred ways to tweak it and use it! Add some cinnamon to the honey mixture and use dried diced apples instead of berries to make a harvest granola, or use sweetened dried coconut, dried diced pineapple and some cherry flavored dried cranberries to make a Hawiian granola. YUM!!! What a wonderfully sneaky way to get more fiber into your kid's diet!

- Preheat oven to 300.
- In a medium sized bowl combine oats, oat bran, ground flax, wheat germ, almonds and salt. Set aside.
- In a saucepan bring honey, brown sugar, vanilla, canola oil, and water just to a bubble over low heat.
- pour the honey mixture over the oat mixture, using a spatula to scrape out every last drop- and toss until the oats are evenly moistened.
- Spread the oats into 2 ungreased 9x13 casserole dishes, and bake at 300 for 20 min, stirring twice.
- Cool completely- add blueberries.

- Grease and flour a bundt or tube baking pan and set aside.
- Mix together butter and sugar until smooth; add eggs, mixing until well blended.
