CHEESE WAFERS
This recipe came from Lady Bird Johnson. I serve them each year on my Christmas Eve buffet. (They can be frozen.)

Steps:
- Preheat oven to 350.
- Cut butter into flour.
- Add cheese and seasonings.
- Fold in cereal.
- Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.
- Bake for 10-15 minutes.
- Don't let them get too brown!

GREAT APPETIZER recipe to have on hand! Also good as a snack or with your favorite soup. From an old Southern Living magazine which states this recipe brought a high rating among their taste-testing panel.

Steps:
- Beat blue cheese and butter until fluffy. Add flour and cayenne pepper. Mix until blended.
- Divide dough in half; shape each portion into a log. Place in waxed paper and refrigerate for at least 2 hours.
- Cut each log into 1/4 inch thick slices and place on an ungreased baking sheet.
- Bake in a 350 degree oven for 13 to 15 minutes. Place on wire rack to cool.
- Note: Cooking time does not include refrigeration time.

Steps:
- Position knife blade in food processor; add first 4 ingredients. Process until blended, stopping once to scrape down sides. (Mixture will be sticky.).
- Transfer mixture to a bowl; stir in walnuts. Cover and chill 5 minutes.
- Divide dough in half. Shape each portion into an 8 inch log. Wrap in heavy-duty plastic wrap; chill 1 hour or until firm.
- Slice dough into 1/4 inch slices; place on ungreased baking sheets. Bake at 350°F for 12 minutes or until lightly browned. Let cool on wire rack.
CHEESE WAFERS
Steps:
- Preheat oven to 350 degrees. Combine the flour, cayenne, and salt in a large shallow bowl. With a pastry blender, cut in the butter until the mixture is the texture of coarse meal. Add the cheese and rub into the flour-butter mixture gently with your fingertips until a small bit of dough, when pinched together, will hold its shape. Roll into 3/4-inch balls, place 1 1/2 inches apart on ungreased baking sheets, then flatten into rounds 1/4-inch thick by pressing with a flat-bottomed glass that has been dipped into flour. (You'll have to keep dipping the glass into flour to keep the dough from sticking to it.) Bake uncovered 10 to 12 minutes until pale tan. Transfer the wafers at once to wire racks to cool, then store airtight.
BLUE CHEESE HAMBURGERS

- Preheat the oven to 350 degrees F.
- In a large mixing bowl combine the beef, garlic, beaten eggs, and salt and pepper, to taste.
- Divide the meat mixture into 6 round even patties. Press 1-ounce of blue cheese and 1-ounce of the cold butter into the center of the formed patty. Remold the patty so that all the cheese and butter are hidden inside the center. Continue until all the beef patties have been formed. Refrigerate for 10 to 15 minutes.
- Pour the oil into a large skillet over medium-high. When the oil is smoking, add the beef patties and cook on both sides until golden brown. Remove to a sheet pan and roast in the preheated oven until desired doneness is reached, about 6 minutes. Cook's Note: They can be also cooked on a charcoal grill.
- Warm the buns slightly, then put the burgers on the buns and top each with lettuce, tomato and an onion ring. Enjoy. You can, if you wish, use mayonnaise, ketchup or mustard to enhance this dish.
BLUE CHEESE POPOVERS
I'm very excited to show you this new, and possibly slightly improved, popover recipe. While we may have tweaked the ingredient amounts a little bit, we are still going to be using our foolproof, cold-oven method for making these. The reason this technique is so fun to use, is that it's literally the opposite of everything every popover expert says you should do.

Steps:
- Whisk eggs, salt, cayenne, milk, oil, and flour together in a large measuring cup or mixing bowl just until blended.
- Cover the bowl with plastic wrap and allow to rest for 1 hour on the counter, or in the refrigerator for 2 to 3 hours, up to overnight.
- Grease 14 nonstick muffin cups with butter, and then mist with cooking spray.
- Whisk the batter for a few seconds and fill each prepared muffin cup 4/5 full. Sprinkle each evenly with blue cheese.
- Place the muffin pans into a cold oven with a drip pan set underneath. Set the heat to 450 degrees F (230 degrees C). Bake in the oven until popovers are well browned and fully puffed, about 30 to 35 minutes. Poke each popover with a knife to allow steam to escape. Serve hot.
