Steps:
- Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
- In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

BLUECORN FETTUCCINE WITH CILANTRO CREAM SAUCE
I came across this recipe while looking for interesting things to do with blue cornmeal. Athough this is time consuming I think it looks interesting and fun to make. Recipe source: Bon Appetit (December 1987)

- To make the fettuccine: mix the all purpose flour (1 cup plus 1 1/2 tablespoons), blue cornmeal, semolina, salt , cumin and cayenne in a large bowl. Make a well in the center of the ingredients and add eggs, and blend together with a fork, until all the flour is incorporated. Knead douh on a lightly floured board until smooth (4-6 minutes), kneading in additional flour if sticky. Wrap dough in plastic wrap and let rest 30 minutes.
- Cut dough into six pieces. Working with one piece at a time (keeping the rest covered), fold piece into thirds. Using a pasta machine at it's widest setting, run dough through several times until dough is smooth and velvety, flolding dough before each run and dusting with flour if sticky. Repeat narrowing rollers after each run until pasta is 1/16th inch thich, dusting with flour if necesary. Hang dough sheet on drying rack or place on kitchen rack to dry. Repeat with remaining pieces of dough until all is completed. Set aside until dough sheets look leathery and edges begin to curl (10-30 minutes). ***Pasta must be cut at this point or it will be too brittle to work with.***.
- Run dough sheets through the fettuccine blades of pasta machine (or cut by hand into 1/4-inch wide strips). Arrange pasta on towel.
- To make sauce: boil cream in a large saucepan until reduced to 1 1/3 cups. Cook chorizo and jalapeno in a large skillet over medium heat until brown, crumbling the chroizo with a fork (10 minutes). Stir in cream, cilantro and cayenne and season with salt.
- In a large pot, add pasta to a large amount of rapidly boiling water, stirring to prevent sticking. Cook until tender (4-5 minutes). Drain. Add pasta to cream sauce and toss to heat through.
BLUE CORN TORTILLAS
Blue corn is one of many different varieties of corn grown by the Hopi and Pueblo Indians. It ranges in color from gray to blue to almost black, and is used in breads, dumplings, sauces and drinks. Blue corn tortillas are traditionally made without salt, as below, for salt is thought to mask the full but subtle taste of the blue corn.

- You will need a medium-sized bowl, a griddle or heavy skillet at least 8 inches in diameter, and a rolling pin.
- Place corn meal in a bowl and pour boiling water over. Stir to mix well. Let sit for fifteen minutes. Mix in one-half cup of all purpose flour. Turn this mixture out onto a bread board spread with 1/4 cup of flour. Knead for 2 to 3 minutes, incorporating the 1/4 cup of flour into the dough (and if necessary, use a little more). The dough will be soft but not at all strong. Return the dough to the bowl and cover. Let rest for 30 minutes.
- Divide the dough into eight pieces. Between well-floured palms, make flat round patties out of each of the eight and set aside. Heat your griddle over medium high heat, making sure that it is hot before you cook the first tortilla. On a well-floured surface (as the dough is quite sticky), carefully roll out a tortilla until it is approximately 7 to 8 inches in diameter. (We find it easiest to first pat out the dough with our fingers or between our palms, and then to roll out the tortilla at the very last just to make it uniform in thickness). Cook the tortilla as you would a wheat tortilla, approximately one minute on each side. The tortillas will be flecked with brown on both sides. When cooked, remove and wrap in a kitchen towel. Stack one on top of another.
CILANTRO HOT SAUCE
Steps:
- Place all of the ingredients together in a small glass (nonreactive) bowl. Stir to mix well. Cover with plastic wrap and allow to stand for half an hour for the flavors to mix. Serve at room temperature.

- Preheat oven to 350 degrees F.
- Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
- Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
- Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
- Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.

- Cook fettuccine according to package directions., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 teaspoons. , Add corn, garlic, salt and pepper to drippings; cook and stir over medium-high heat until corn is tender. Remove 3/4 cup corn from pan. Transfer remaining corn to a food processor; add cheese, almonds and oil. Process until blended. Return to skillet; add reserved corn and heat through., Drain fettuccine, reserving 1/2 cup pasta water. Add pasta, three-fourths of the bacon and 3/4 cup basil to corn mixture. Add enough reserved pasta water to reach desired consistency, tossing to coat. Sprinkle with remaining bacon and basil. If desired, top with tomatoes and additional cheese.
