BONE-IN PORK ROAST
Pork is one of my husband's favorite dishes, and he absolutely loves this one. A great choice for a Sunday dinner. A delicious recipe from Tyler Florence, courtesy of Food Network. 6 hours of preparation time is for brining the pork.

Steps:
- Have butcher cut the chine bone in between each rib of the pork roast to make carving easier.
- Leave the fat cap on for added moisture and flavor.
- Line a large stockpot or bucket with a plastic bag (I use a paint bucket I purchased from a paint store specifically for brining).
- Pour water in and dissolve the salt and brown sugar.
- Add peppercorns and a few thyme sprigs.
- Place the pork roast in the brine and if using a bag, tie the bag closed so the pork is submerged.
- Refrigerate (I surround with ice) for 6 hours.
- Remove pork from the brine and dry thoroughly with paper towels.
- Preheat oven to 400°F.
- Lay thyme sprigs all over the roast, season with salt and pepper, then secure with butcher's twine to help hold the shape.
- Coat a roasting pan with olive oil and set on 2 burners over high heat until almost smoking.
- Sear the pork, fat side down, until caramelized.
- Turn the roast to brown all sides, about 10 minutes.
- To flavor the pork drippings, scatter carrots, garlic, onion, shallots and more thyme sprigs in the pan, and then transfer the roast to the oven.
- Roast until a meat thermometer, inserted in the thickest part of the roast registers 150°F-- about 1 hour.
- Remove the pork to a cutting board to rest while preparing the pan sauce.
- Discard the aromatic vegetables and set the pan on 2 burners over high heat.
- Deglaze the pan with apple juice, scraping up the yummy bits off the bottom.
- Reduce by a third, season with salt& pepper, and whisk in the butter to smooth out.
- Serve.

- Heat olive oil in a large deep skillet over medium heat. Brown the sausage links on all sides until cooked through. Remove the links from the pan and slice on a bias. Add slivered garlic, red pepper flakes and fennel seed, stir to incorporate. Return the sausage back to the pan, along with broccoli rabe and chicken broth. Saute with the stock for 5 minutes until the rabe is wilted.
- Whisk together balsamic vinegar, honey, mustard seed, tarragon, and about 1/4 cup olive oil. Slice peaches in half lengthwise and remove pits. Pour the marinade over the peaches, tossing to coat. Place peaches cut side down in a baking pan and roast for 12 to 15 minutes until soft.
- Remove the pork to a cutting board and let it rest while preparing the pan sauce. Discard the aromatic vegetables from the roasting pan, set pan on 2 burners over medium heat. Deglaze with apple juice, scraping up the brown bits stuck to the bottom of the pan. Reduce by a third. Season with salt and pepper; whisk in butter to smooth out.
- Cut the twine and carve the roast. Serve family style on a platter with broccoli rabe, sausage, and roasted peaches. Drizzle sauce over meat before serving.

- Preheat the oven to 450 degrees F.
- For the pork: Mix together the mustard and apple cider and brush all sides of the pork loin and ribs with the mixture. Liberally sprinkle the pork loin and ribs with the smoked paprika, 1 tablespoon salt and 2 tablespoons cracked black pepper. Add some oil to a cast-iron skillet or roasting pan, then place the rack of ribs, curved-side down, in the skillet and place the loin, fat-side up, on top of the ribs. Roast until the internal temperature of the loin reaches 145 degrees F, about 30 minutes.
- While the pork begins to roast, cut the carrots, parsnips, potatoes and turnips into wedges using an oblique cut: Place a vegetable on a cutting board and hold your knife at a 45-degree angle to the vegetable. Cutting roughly 1-inch slices on the diagonal, roll the vegetable a quarter turn toward you each time you make a cut so you're cutting point to point until the vegetable is completely cut. Add the carrots, parsnips, potatoes, turnips, garlic and thyme to the skillet with the pork roast. Drizzle with some olive oil and sprinkle with salt and pepper. Return the skillet to the oven and continue to cook until the loin reaches 145 degrees F.
- Transfer the pork loin to a cutting board to rest and tent with foil. Return the skillet to the oven and cook until the ribs and vegetables are cooked through, about 30 minutes.
- Remove the skillet from the oven, transfer the vegetables to a platter and transfer the ribs to a cutting board.
- For the pan gravy: Heat the same skillet over medium heat. Add the flour and whisk until it absorbs the fat in the skillet. Slowly whisk in the cider and 1 cup water and bring to a simmer, whisking constantly to smooth out any lumps, until the sauce thickens slightly, about 2 minutes. Stir in the parsley and set aside.
- Cut the rack of ribs into individual ribs and scatter over the roasted vegetables. Slice the pork loin and shingle onto the platter. Spoon the pan gravy over the top and serve.
HERB-CRUSTED PORK SIRLOIN ROAST
No store-bought spice rub here. An easy-to-make, homemade rub adds great flavor to the pork!

- Bring roast to room temperature by removing from the refrigerator 30 minutes before cooking.
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine olive oil, garlic, thyme, sage, lemon zest, rosemary, salt, and pepper in a small bowl. Spread rub over roast until completely coated. Place on a rack in a roasting pan.
- Roast in the preheated oven until slightly pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 150 degrees F (66 degrees C).
- Remove from the oven and tent loosely with foil. Allow to rest for 10 to 15 minutes before carving.

DAD'S BASIC MOIST PORK ROAST
This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

- Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
- Preheat an oven to 475 degrees F (245 degrees C).
- Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.

- Brine Your Pork. Brine the pork prior to roasting, if desired. Prepare your brining bag by lining a bucket or stockpot with the bag for extra sturdiness.
- Bring to Room Temperature. Remove the pork from its brining bag and dry thoroughly. Leave it out to sit for 30 minutes to allow it to come to room temperature and preheat the oven to 450 F.
- Remove Some Fat. Examine the roast to determine how much fat it has and where. A naturally marbled pork roast needs to have excess surface fat removed; simply slide a knife under the fat layer and remove some or all of the fat.
- Tie It Up. Wrap a series of string circles along the length of the roast, if desired. Slide lengths of kitchen string or twine under the roast and tie them at the top.
- Add Some Seasonings. Rub the pork roast with your choice of dried seasonings. Salt and pepper are standard seasonings, but you might want to reduce your salt and substitute dried herbs such as rosemary or sage.

- Cook in Oven. Lower heat to 350 F and continue cooking the pork roast. According to the USDA Food Safety and Inspection Service, you should plan on a bone-in pork sirloin cooking time of 20 minutes per pound.
- Check the Temperature. Check the roast after it has been cooking at 325 F for 75 to 100 minutes, depending on the size of the roast. Open the oven door and pull the oven rack out partway to check the roast's internal temperature.
- Let the Meat Stand. Let the roast stand for about 10 minutes. Then check the internal temperature again to ensure a final internal temperature of 160 to 165 F.
