Great weeknight dinner, because it's so fast to prepare! Or make it for your half-time party on Super Bowl Sunday--it's a crowd pleaser for sure! This is a Rachael Ray recipe that I adapted to my family's taste by adding the parm. If you like buffalo wings with garlic & parm, you'll love this.

Boneless Buffalo Chicken With Garlic & Parmesan image

Steps:

  • Heat olive oil & add the chicken, salt, pepper, and garlic, stirring from time to time. Saute for several minutes until the chicken is cooked through totally. Turn off the heat & then add the hot sauce and butter, tossing to coat the chicken and melt the butter. Add the cheese and continue tossing until the sauce looks well blended.
  • Serve with rice, potatoes, or noodles.

Crispy Garlic-Parmesan Chicken image

Steps:

  • 1. Heat oven to 400 degrees F. Line cookie sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Sprinkle chicken with salt and pepper to taste.
  • 2. In shallow dish, mix butter, 3 tablespoons of the cooking sauce and the garlic powder. In another shallow dish, mix bread crumbs and cheese. Dip chicken into butter mixture, then dip into bread crumb mixture to coat. Place on cookie sheet.
  • 3. Bake 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165 degrees F) and coating is golden brown. Meanwhile, heat remaining sauce until hot. Serve chicken with pasta and sauce. Sprinkle with additional cheese and basil.

Garlic and Bacon Boneless Chicken image

Steps:

  • Preheat oven to 400 degrees.
  • First cook bacon in a skillet until crispy.
  • Crumble bacon and set it to the side.
  • Drain skillet but do not rinse.
  • Add 1 tablespoons olive oil and 1 tablespoons butter in skillet.
  • Add onions, garlic, pepper and bacon.
  • Cook on medium heat until onions are soft.
  • Remove from pan with the drippings, and put them to the side.
  • Add 1 tablespoons olive oil and 1 tablespoons butter to skillet brown chicken breasts on both sides for about 1 1/2 minutes apiece.
  • Put chicken in ungreased pan.
  • Coat the tops of chicken lightly with the bread crumbs.
  • Next spoon garlic, onion, and bacon mixture over each piece of chicken.
  • Sprinkle with shredded cheese.
  • Bake for 25 minutes uncovered for medium sized breasts.
  • Let stand 3 minutes and serve.
