SWEET-AND-SPICY CHICKEN AND STEAK TACO BAR

This great summer party spread takes surprisingly little time to put together and gives guests plenty of ways to personalize their tacos. Chicken thighs and skirt steak get flavor from a chipotle marinade and cook in under 10 minutes. The corn for the relish, a spoonable version of the popular Mexican street food elote, also gets a quick char on the grill; the other toppings need no cooking.

Steps:

  • For the marinade: Pulse the chipotles and adobo sauce, orange juice, cider vinegar, dark brown sugar, oil and 1/2 teaspoon salt in a mini-food processor or blender until smooth and emulsified. Reserve 1/3 cup of the marinade and set aside. Place the chicken and steak in separate large resealable plastic bags, divide the remaining marinade between the bags and toss the meats to coat. Seal the bags and refrigerate for 1 hour.
  • For the corn salsa: Prepare a grill for medium-high heat. Lightly oil the grill grates. Brush the corn cobs evenly with 2 tablespoons vegetable oil and sprinkle ears with 1/2 teaspoon salt and a few grinds of pepper. Grill, turning occasionally, until the kernels are cooked through and charred in spots, 10 to 15 minutes. Set aside to cool slightly; keep the grill heat at medium-high.
  • Whisk the mayonnaise, lime zest, lime juice, and Parmesan in a large bowl until combined. Cut off the corn kernels with a paring knife and stir into the mayonnaise mixture. Mix in the cilantro and set aside.
  • For the taco bar: Transfer the chicken and steak to a rimmed baking sheet and sprinkle with 1 teaspoon salt . Wrap the tortillas in foil and set to the side on the heated grill to warm while you cook the meat.
  • Arrange the chicken and steak on the grill, brush the tops with some of the reserved marinade and cook 5 minutes. Flip, and cook until the chicken is cooked through and the steak is medium-rare, another 5 minutes for thinner pieces, and 7 to 8 for thicker. Right before you take the chicken and steak off the grill, brush with the reserved marinade, flip, and cook to caramelize the marinade, about 1 more minute. Transfer the chicken and steak to a cutting board and let rest 5 minutes before slicing. Roughly chop the chicken into 1-inch chunks and slice the steak across the grain. Serve immediately with the tortillas, corn salsa, Monterey Jack, avocados, limes, radishes and salsa.

2 cups prepared pico de gallo or salsa

BONNIE'S SALISBURY STEAK image

Steps:

  • 1. PREPARE THE MEAT THE NIGHT BEFORE: Combine the ground beef, bread, onion, mince garlic, sea salt and fresh cracked pepper in a large bowl. Add the milk. Mix well. Form into oval shaped patties, not too thick or thin. Wrap the patties individually and tightly in saran wrap and refrigerate over night. (Don't skip this step!)
  • 2. MAKING THE SALISBURY STEAKS: In a small skillet, prepare the 2 packets of gravy per instructions. Add the one tablespoon of Lipton Mushroom Onion mix. (or 1/2 tablespoon if you use one packet) Once it's thickened, add the mushrooms and simmer. Sprinkle the prepared Salsibury Steak patties with the McCormick Steak Seasoning. Heat a medium skillet over medium heat. Once it's hot, add the salisbury steak patties and cook for 3-4 minutes on each side, until nice and brown, and to your desired degree of doneness. Use oil very sparingly if you have to.
  • 3. SERVING THE SALISBURY STEAKS: You can serve the salsibury steaks two ways. You can add the gravy right into the pan and simmer it with the Salsibury Steaks for a few minutes. The gravy should be thickened. (We prefer it like that because the gravy picks up the juices of the meat) Or you can place the cooked steak patties on a serving dish and cover with the mushroom gravy. Garnish with 1 teaspoon chopped green onion. Enjoy!

1 pound lean fresh ground beef
1/2 sweet yellow onion, diced fine
3 slices of bread from a long loaf of french bread. cut the slices about one-half inch thick and tear into small pieces.

  • Place the flank steak in a baking dish. In a medium mixing bowl or large measuring cup, stir together the olive oil, garlic, orange juice, lime juice, cumin, salt, and pepper. Preheat an outdoor grill or indoor grill pan over medium-high heat (alternatively, you can cook the steak under your broiler—place your oven rack in the upper third, usually the second closest rack to the top). Brush the grill grates with oil. Remove the steak from the marinade, shaking off any excess. Grill (or broil) the steak for about 3-4 minutes per side, flipping once, until medium-rare (The steak should read 135 degrees F on an instant read thermometer.) Remove the steak to a cutting board and cover with foil. Let rest for 5 minutes (this allows the juices to sink into the meat), then cut the steak into thin, 1/4-inch slices, slicing it across the grain.
  • To heat the tortillas: place them in a dry skillet heated over medium-high or heat them on the grill for about 30 seconds per side, until warmed through.
  • Assemble the tacos: fill the tortillas with a few slices of beef. Sprinkle with cheese and any desired toppings. Enjoy immediately.
