TAKEOUT-STYLE CHINESE SPARE RIBS

Takeout-Style Chinese Spare Ribs image

Steps:

  • Mix together the hoisin sauce, soy sauce, brown sugar, honey, five-spice powder, garlic, ginger and food coloring in a metal, non-reactive bowl. Pour the marinade into a large zip-top bag, reserving 1/2 cup on the side for basting later. Add the ribs to the bag and marinate, refrigerated, for at least 3 hours, though longer is better and overnight is ideal.
  • Heat a charcoal or gas grill to 275 degrees F for direct and indirect grilling.
  • Remove the ribs from the marinade (discard the marinade) and place onto a wire rack. Place the rack directly on the cooler side of the grill. Cook until the meat is very tender, basting with the reserved marinade 3 times during the cooking process, 2 to 3 hours.
  • Drizzle the ribs with honey, move them to the direct heat side and quickly char each rib to caramelize.

1/2 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons dark brown sugar
2 tablespoons honey, plus a bit extra to finish
1 tablespoon five-spice powder
1 teaspoon granulated garlic
1 teaspoon grated fresh ginger
1 teaspoon red food coloring
2 racks spare ribs (8 to 10 pounds, St. Louis-style work best), individually sliced into single ribs

CHINESE SPARERIBS

After searching the internet for a good Chinese Spareribs recipe and not finding any that caught my eye, I decided to make my own. This recipe is pretty simple, and yields tender, juicy, tangy ribs. In Japan, I cooked this in the fish broiler, but it should be fine on the grill or in the oven.

Steps:

  • In a shallow glass dish, mix together the hoisin sauce, ketchup, honey, soy sauce, sake, rice vinegar, lemon juice, ginger, garlic and five-spice powder. Place the ribs in the dish, and turn to coat. Cover and marinate in the refrigerator for 2 hours, or as long as overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Fill a broiler tray with enough water to cover the bottom. Place the grate or rack over the tray. Arrange the ribs on the grate.
  • Place the broiler rack in the center of the oven. Cook for 40 minutes, turning and brushing with the marinade every 10 minutes. Let the marinade cook on for the final 10 minutes to make a glaze. Finish under the broiler if desired. Discard any remaining marinade.

Bonnie's Chinese Spare Ribs image

Steps:

  • Whisk together in a pan and heat until all dry ingredients are incorporated.
  • Cut a rack of St. Louis stlye pork spareribs into individual ribs and put in a container for marinating and marinate at least two hours, if not overnight.
  • Remove ribs from marinade (reserve marinade); arrange on the rack, meat (not bone) side up. Place pan on middle rack of oven; pour in enough water that it reaches halfway up the sides of the pan, making sure the water does not touch the ribs. Bake ribs for 35 minutes. Baste ribs with reserved marinade; flip and baste again. Bake for 35 minutes more. (Add more water to pan if it dries up.) Raise heat to 450°. Flip ribs again; baste with remaining marinade. Continue baking until ribs are glazed, browned, and tender, about 20 minutes more.

  • Mix spareribs, allspice, salt, eggs, MSG and soya sauce together.
  • Marinate for 2 to 4 hours.
  • Mix together flour and crumbs.
  • Put ribs into flour mixture and mix until well covered.
  • Deep fry 2 or 3 minutes if freezing OR 4 to 5 minutes if eating right away.

This is my co-worker's recipe and I have added additional seasonings. Very restaurant quality. Prep time includes minimum marinade time and cook time is a guess depending on how you deepfry. We deepfried in 1/2" oil in cast iron pan.

Steps:

  • In bowl, whisk together soy sauce, plum sauce, tomato paste, hoisin sauce, dry sherry, ginger, garlic, sesame oil, and salt. Set aside.
  • Preheat oven to 350 degrees Fahrenheit.
  • Rub sugar on all sides of ribs.
  • Place on greased or sprayed rack, in foil lined roasting pan, meat side up.
  • Bake, tightly covered, 1-1/4 hours.
  • Drain juices from pan; remove rack and return ribs to pan.
  • Spread sauce over ribs, turning to coat.
  • Bake, uncovered, 40 minutes or until ribs are tender and glazed, turning and basting twice.

  • Place the rib pieces, sugar, salt, wine, sesame oil and white pepper into a bowl and mix until the ribs are coated. Cover and let them marinate in the fridge overnight for best results. If you're strapped for time, 30 minutes is the minimum marinating time. Add cornstarch and water to the marinated ribs and mix well. With the cornstarch, there should be little or no liquid in the mixture.
  • Place the ribs on a heatproof plate for steaming. We used small dim sum style plates as you can see in the photos, but you can use a large, shallow heat-proof bowl for the whole batch. Once you have plated the ribs, sprinkle the peppers and the fermented black beans over the top.
  • Next, bring some water to a simmer in a metal steamer or in a wok with a steaming rack set in the bottom. Place the plate(s) into your steamer apparatus, cover, and steam for 10 minutes, or until the ribs are opaque and cooked through. Serve as dim sum or as a delicious one plate meal over rice!
