PRESSURE-COOKER BLACK BEAN SOUP

Life can get really crazy with young children, but I never want to compromise when it comes to cooking. This recipe is healthy and so easy thanks to my one-pot cooker! -Angela Lemoine, Howell, New Jersey

Pressure-Cooker Black Bean Soup image

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, add corn. Cook and stir until golden brown, 4-6 minutes. Press cancel. Remove corn and keep warm. Add beans, broth, onion, red pepper, garlic and cumin to pressure cooker., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. , Puree soup using an immersion blender. Or cool soup slightly and puree in batches in a blender; return to pressure cooker. Heat through., Sprinkle soup with pepper. Garnish with reserved corn and cilantro., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary. Sprinkle with toppings.

BONNIE'S OLD-FASHIONED THICK WHITE BEAN SOUP

This is how I make thick white bean soup for my family from scratch. It is easy to do, delicious, and the thick broth will have them coming back for seconds. Bake up some cornbread, and no one will leave the table hungry. Enjoy! This humble recipe is my own and so is the photo.

BONNIE'S OLD-FASHIONED THICK WHITE BEAN SOUP image

Steps:

  • 1. Cook the beans with water, covered, in a large soup pot until tender. Use any method you wish. I just rinse the beans, place them in a large heavy pot with the ham bone, bring to a boil and simmer on the lowest setting until tender. (Low heat keeps the beans from falling apart) It takes about 4 hours. Do not add any salt until the beans are tender. Salt can make the beans tough.
  • 2. About two hours before the soup is ready, saute the vegetables in the olive oil until tender, adding the garlic the last two minutes. Add the tomatoes, and the sauteed vegetables to the soup. Add the thyme, black pepper, and chicken granules and the chopped ham.
  • 3. Peel the 2 large russet potatoes, diced small, and place in a small sauce pan. Ladle enough liquid from the beans to just cover the potatoes. Bring to a boil and simmer on low until they are done enough to mash. Mash the potatoes by hand until almost smooth, and then dump the mixture in the soup to thicken it. Stir, continue to simmer the soup, covered on very low heat. Adjust seasoning to your taste and serve. Enjoy!

1 hambone and 2 cups of chopped ham
1 pound of great northern white beans, picked over and rinsed
2 quarts of water
2 large russet potatoes, peeled and diced
2 large onions chopped
2 cups chopped celery
1 cup sliced carrots
1/4 cup chopped bell pepper
1 teaspoon thyme
1 tablespoon minced garlic
3 tablespoons chicken granules
1 cup diced canned or fresh tomatoes
2 tablespoons olive oil to saute vegetables
black pepper to taste

PRESSURE COOKER BLACK BEAN SOUP

This inky soup, made in a pressure cooker, shows off black beans at their toothsome best. Adapted from the cookbook author and pressure-cooking maven Lorna Sass, the soup gets a bold finish with a mound of tomato-avocado salsa. It is hearty enough to serve for lunch or a light dinner.

Pressure Cooker Black Bean Soup image

Steps:

  • In a 6-quart or larger stovetop pressure cooker or an electric pressure cooker, heat the oil over medium-high heat or using the sauté function. Stir in the onions, chile powder, cumin and oregano and cook, stirring frequently, until the onions begin to soften, about 1 minute.
  • Add the water, beans, chorizo, garlic and bay leaves.
  • Lock the lid in place. Over high heat, bring to high pressure. Reduce the heat just enough to maintain high pressure and cook for 30 minutes. If using an electric pressure cooker, cook on high pressure for 30 minutes.
  • Turn off the heat if using a stovetop cooker, and allow the pressure to come down naturally, about 15 minutes. Remove the lid, tilting it away from you to allow the steam to escape.
  • Stir well. Discard the bay leaves and add salt to taste. The soup will thicken on standing.
  • Just before serving, prepare the avocado salsa by tossing the ingredients together in a bowl. Ladle the soup into bowls and top each portion with a large dollop of salsa.

HAM BEAN SOUP (PRESSURE COOKER)

This is a quicker version of my Recipe #145910. The only real difference between this and the long simmering version is that you don't have to remember to soak the beans overnight, and the beans retain more texture. My dad loves the original recipe, and he declared this to be just as good.

Ham Bean Soup (Pressure Cooker) image

Steps:

  • Put the ham bone in the bottom of the pressure cooker (I normally have to break mine into pieces so it will fit).
  • Pour the dried beans on top of the bone, and cover with cold water (don't fill your cooker more than 2/3 full). Sprinkle on the dried onion, garlic powder, and pepper.
  • Lock on the lid, bring to pressure, then reduce the heat and cook for 25 minutes.
  • Remove from the heat, and let sit for 15 minutes, before carefully removing any remaining pressure.
  • Remove the lid, pour in the can of tomatoes including their juice, and the ham pieces. Simmer for 20 minutes.
