- 1. Lay out wax paper spray with butter spray so it is ready to use. In Sauce pan all ingredients except peanuts, med heat, bring to boil, using candy thermometer....boil to soft ball stage approx. 1 hr stirring constantly...
- 2. Then add 3C Nuts...fold in...remove from heat, immediately to wax paper and start dropping by teaspoonful onto wax paper as fast as you can... the candy will thicken fast if need be return to stove and heat just a bit to soften a bit to return to the liquid stage once more.
- 3. Let candy cool completely before storing... If you want to add food coloring to it you may but we like ours O-Natural.....

- 1. Place the first four items in a heavy saucepan. Stir to combine.
- 2. Bring to a boil and continue cooking on a low boil, uncovered, for approx one hour until soft ball stage (235-240*), stirring occasionally.
- 3. While cooking, prepare a spot on your counter top with waxed paper to drop candy on.
- 4. At soft ball stage, remove from heat and add margarine/butter stirring until melted.
- 5. Add powdered sugar, sifting if needed, and red coloring. (I use extra for more color)
- 6. Stir to combine well. Keep stirring until it just starts to thicken.
- 7. Quickly drop by spoonfulls onto waxed paper. The nuts should be flat, not in a pile. If candy starts to get too thick, just place pan back on heat to warm slightly.
- 8. Depending on your preference, they can be any size you like. I prefer to eat several that are 2" across. Bobby likes bigger ones. Your choice will always be right.
- 9. ENJOY

- 1. Cook all ingredients from top list together to soft ball stage, pretty firm. Remove from heat.
- 2. Add 1 1/2 cups powdered sugar and 4 tablespoons of butter. Also add a few drops of red food coloring.
- 3. Mix well and drop large spoonfuls out on wax paper to cool. Should be about 3-4 inches wide. Wrap in plastic wrap when cool. Do not leave out in air as they will get dry.
PAWPAW'S PEANUT PATTIES
This was my daddy's favorite candy. I like these so much better than the ones you buy. I didn't even like peanut patties at all until I made these for Daddy. Now all my grandchildren ask for these to be made at Christmas. I like the ones without as many peanuts, the pink candy is really good!

- Lay out wax paper to lay out candy on. This sets up really fast once it gets to that point. A friend suggested using 2 people to drop out the candy because of that.
- In heavy saucepan combine sugar, light corn syrup, water. Heat to boiling. Once all sugar is melted and mixture is boiling add the peanuts and food coloring.
- Continue boiling until a long thread drips down from the spoon when held up over the pan. The long thread should be a long spiderweb-looking thread. It should easily get to 6 inches. Remove from heat.
- Add vanilla and butter. Beat until mixture starts to thicken and loses some of its gloss. Quickly spooon out candy. I have found that if you don't let the candy get completely cool it is much easier to get them off the paper they are dropped out onto. Store in a covered container.

- In a saucepan over medium-low heat, combine the sugar, corn syrup, evaporated milk, and peanuts. Bring to a slow boil, and stir to blend once heated. Let boil until the mixture reaches a temperature of between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. This may take up to 1 hour.
- Stir in the butter, vanilla and food coloring once the mixture has reached the proper temperature. Spoon out onto waxed paper or parchment paper to form patties. Cool until set.

DELICIOUS PEANUT PATTIES
Well, Not exactly patties, more like small burgers or schnitzels but with no meat and no milk! My sister in law brought it once to a family dinner and we all devoured it in minutes. Thank you Efrat! Yummies that won't last 5 minutes anywhere. (Especially if you dip them in Sweet Chilly Sauce).

- Mash (with food processor or blender)the corn, scallions, peanuts, cumin, garlic and ginger.
- Add flour and eggs to the mixture. Blend everything.
- Add salt and pepper(to taste).
- Heat oil according to the size of your frying pan. (frying each side at its turn will do just fine- no need to rush to deep fry). Wait till oil is hot to prevent soaking.
- Gently spoon the mixture and lay a patty size mixture on the pan. Flip side when lightly brown. Lay done burgers/schnitzels/patties on blotting paper to cool and dry.
- Eat! (I like to lightly dip the burgers in Sweet Chilly Sauce - Yum!).

- Combine the sugar, pudding mix, and milk in medium sauce pan over medium high heat stirring frequently. Bring the mixture to a boil; reduce the heat to medium and boil for 5 minutes.
- Remove from the heat and stir in the vanilla.

- In a deep, heavy-bottom sauce pan (preferably enameled cast iron), add the sugar, peanuts, corn syrup, water and salt. Clip your candy thermometer to the side of the pan, but ensure the probe does not touch the bottom of the pan--you want it to hang slightly above for an accurate reading of the candy, not the pan.
- Turn the heat to medium, and begin to stir the mixture with a silicone spatula. Keep stirring while cooking until the mixture reaches 240 degrees. Immediately turn off the heat, add the butter, red dye and vanilla. Let the butter melt. Let the mixture rest and stir it every minute or so until it cools to 130-135 degrees. Meanwhile, have ready a sheet of parchment or wax paper.
- Once the mixture reaches 135 degrees, begin scooping it by the heaping tablespoon onto the paper. Work quickly before it sets! Press the mixture into patty shapes. Let cool completely on the counter, then wrap in plastic wrap for storage. Do not leave the patties uncovered--they will absorb moisture from the air and their texture will change. Keep tightly wrapped!
