Steps:

  • For the roasted okra: Preheat the oven to 350 degrees F.
  • Toss the okra with some olive oil, then spread in a baking sheet. Bake until cooked through, about 15 minutes.
  • For the blackening spice: Stir together the paprika, salt, pepper, cayenne, garlic powder, onion powder, oregano and thyme in a jar.
  • For the gumbo: Saute sausage, garlic, celery, onion and peppers in 1/2 cup olive oil in a saucepot until veggies are soft.
  • Mix flour with canola oil and remaining 1/2 cup olive oil in a saute pan over medium heat and cook until dark brown, then add to veggie pot. Add 1/4 cup blackening spice (save the remainder for another use). Add stock, chicken, pork, tomatoes, file, oregano, thyme and bay leaf, then add salt and pepper to taste. Bring to a boil and let simmer for 45 minutes.
  • Mix the okra in with the rest of the gumbo. Serve with rice or cornbread.

6 cups chicken or pork stock
2 cups shredded smoked chicken
2 cups shredded smoked pork
2 cups crushed canned tomatoes
1 teaspoon gumbo file
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh thyme
1 bay leaf
Salt and pepper
Rice or cornbread, for serving

Steps:

  • Combine the oil and the flour in a heavy stockpot or Dutch oven over medium heat. With a wooden spoon stir the mixture slowly and constantly. After about 5 minutes the mixture will begin to foam. Keep stirring. As the roux cooks, the color will darken and the flour will have a nice nutty aroma. It should take about 15 minutes to fully develop a nice dark brown roux.
  • When the roux is ready add the celery, onions and peppers (the Trinity) and cook for about 10 to 15 minutes. Once the vegetables have softened, add the bourbon and stir for 2 minutes, add chicken broth a little at a time to make sure the roux mixes well and is incorporated. Add the remaining ingredients, diced tomatoes, chicken, okra, bay leaves, Hot Sauce and season with salt and pepper.
  • Bring to a boil then lower heat and simmer uncovered for 1 1/2 hours, skimming off any fat that rises to the surface and stirring occasionally. In the last 7 minutes, add the shrimp and cook until no longer pink. At the very last minute add the fresh cilantro. Season with more salt and pepper, if necessary. Remove bay leaves and serve with rice and crusty flat bread.
  • Roughly chop the chiles and jalepenos discarding the seeds. Add to a food processor, along with the tomatoes, apple cider vinegar, garlic, sugar and salt. Process until desired consistency. If it's too dry add a little water. Pour mixture into a small saucepan and simmer for about 10 minutes. At this point you can strain it for a loose hot sauce or leave it as it is for a chunky hot sauce. Season with more salt, if necessary.
  • In a medium covered saucepan bring salted water to a boil. Add the rice, cover and lower the heat. Cook for 20 minutes until water is absorbed.

BOONE'S JAMAICAN GUMBO

This is a fast, easy recipe for a Caribbean gumbo utilizing very few ingredients, some of which aren't even indigenous to Jamaica but are staples of Creole-style gumbos. The central element of any gumbo is the roux, and in this case we're using Fish Tea, a traditional Jamaican soup that can take 4 hours to make from scratch. Obviously, if you want to have some fun and you have the time on your hands you're free to learn that recipe elsewhere, but I recommend using the packaged fish bouillon sold in grocery stores (specifically the Grace brand). As usual, feel free to substitute in/out ingredients where desired. For instance, I left out okra because it tends to make the gumbo too slimy, but you can add it. Same goes for any traditional Caribbean food you'd like to include.

Steps:

  • Get your chicken going first, as it will take the longest (30-40 minutes). In the meantime, also get your rice cooking (20 minutes).
  • Bring a separate pot to boil with the Fish Tea in it, then reduce to a simmer for 5-7 minutes. Brown the sausage while the Fish Tea simmers, drain corn, and everything should finish about the same time.
  • Finely chop the chicken breasts and slice sausage. Add to rice along with the drained corn. Add all into large pot and keep warm. Serve with toasted English muffins or other bread. Add calypso sauce for extra spice.

Steps:

  • Heat oil in a large Dutch oven over medium-high heat; gradually whisk in flour and cook, whisking constantly, 5 to 7 minutes or until flour is chocolate colored. Do not burn mixture.
  • Reduce heat to medium. Stir in onion and next 4 ingredients and cook, stirring constantly, 3 minutes. Gradually stir in chicken broth; add chicken and next 2 ingredients. Increase heat to medium-high and bring to a boil. Reduce heat to low and simmer, stirring occasionally, 20 minutes.
