- In a large bowl, combine the first 12 ingredients. Crumble the meats over the mixture and mix well; divide into 24 portions., Wrap each cheese cube with a cut bacon strip. Shape one portion of meat mixture around each bacon-wrapped cheese cube. Place meatballs on a greased rack in a shallow baking pan. , Bake, uncovered, at 400° for 20-25 minutes or until a thermometer reads 160°. Drain on paper towels. Serve on lettuce-lined buns with barbecue sauce.

SLOW-COOKER BARBECUE BACON CHEESEBURGER MEATBALLS

- Spray 3 1/2- or 4-quart slow cooker with cooking spray.
- In large bowl, mix beef, bacon, bread crumbs, onion, milk, egg, honey, grill seasoning and salt. Shape into about 24 (1 1/2-inch) meatballs; tuck one piece of cheese in center of each meatball, and seal completely. Add meatballs to slow cooker. Add barbeque sauce, and gently turn to coat.
- Cover; cook on Low heat setting 3 to 4 hours or until meatballs are thoroughly cooked (165°F); stir. Thread pickle slices on cocktail picks, and serve with meatballs.

- Preheat the oven to 425 degrees F (220 degrees C). Place a cooking rack on top of a baking sheet.
- Combine ground beef, bread crumbs, onion, egg, Worcestershire sauce, steak seasoning, salt, and pepper in a bowl; mix until combined. Shape mixture into 8 meatballs, forming each one around a cube of Cheddar cheese. Wrap each meatball with 1/2 slice of bacon and place seam-side down on the cooking rack, leaving 1 to 2 inches between each one.
- Bake in the preheated oven for 20 minutes. Reduce heat to 375 degrees F (190 degrees C) and continue baking until meatballs are browned, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
- Remove from oven and drizzle meatballs with barbecue sauce.

STEAK 'N' BACON CHEDDAR MEATBALLS
This is essentially a bacon cheeseburger in meatball form. The cooked steak should be diced into small bites, not ground, for the best texture.

- In a large skillet, heat 1 tablespoon oil over medium heat. Add onion and bacon, and cook, stirring, until bacon has browned and onion is translucent, about 10 minutes. Using a slotted spoon, transfer onion and bacon to a plate and cool in refrigerator.
- Heat oven to 450 degrees. Use the remaining 2 tablespoons oil to coat a 9-by-13-inch baking dish.
- In a large bowl, combine steak, ground beef, cooled bacon and onions, cheese, eggs, bread crumbs and salt, and mix lightly but thoroughly by hand. To taste for seasoning, heat a small skillet and fry a chunk of the mixture until browned. Add salt and pepper to taste.
- Roll mixture into golf-ball-size balls, packing firmly. Pack snugly into the prepared dish, making even rows to form a grid. Roast for 20 minutes, or until firm and cooked through. (The center should be at 165 degrees.)
- Let cool for at least 5 minutes before serving.

BACON CHEESEBURGERS

Steps:
- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

CHEESE STUFFED BACON MEATBALLS

- Preheat the oven to 400 degrees F.
- Arrange the bacon slices on a sheet pan. Put in the oven and bake until crisp, about 8 to 10 minutes. Remove the bacon from the pan to a cutting board and chop. Set aside.
- In a large bowl, mix together the beef, Worcestershire, onion soup mix, bread crumbs, black pepper, stock and the chopped bacon.
- Form portions of the meat around bocconcini to make smooth balls. Arrange the meatballs on a sheet pan with a rack and bake until thoroughly browned, about 10 to 15 minutes.
- Add the oil to a medium saucepan over medium-high heat. When the oil is hot add the onion, garlic, basil, oregano and pepper and saute for a few minutes. Stir in the crushed and diced tomatoes, red pepper flakes and the bouillon. Lower the heat and simmer for 10 to 15 minutes.
- Remove the meatballs from the pan to a serving platter and serve with the marinara sauce.
BACON CHEESEBURGER "GARBAGE BREAD"

- Preheat oven to 425°. Line a baking sheet with parchment paper and set aside.
- In a large skillet over medium-low heat cook bacon until it's crisp. Remove the bacon from the pan and set aside.
- In the same skillet, with the bacon grease increase heat to medium high. Add the onions and ground beef into the skillet and cook until the the onions are soft and the meat is cooked through. Drain the excess liquid/grease from the pan. Place the skillet back on the heat and turn the heat to low. Add bacon back into the pan and season with the steak seasoning. Add in the Velveeta and stirring continuously cook until the cheese is melted. Remove the pan from the heat.
- Roll the pizza dough out onto the prepared baking sheet. The dough should be approximately a 15x10 rectangle. Spread the meat mixture evenly on top, leaving an inch at the edges to allow for spreading. Sprinkle the grated cheese on top of the meat. Roll up the pizza dough, starting with the long sides and pinch the crust together to seal. Bake seam side down for 15-20 minutes, or until golden brown. Allow the bread to cool for 5-10 minutes before slicing.
- In a small bowl whisk together the mayonnaise, ketchup, salt, and pepper.
- Dip the sliced bread into the sauce, if desired.

BACON CHEESEBURGER BOMBS
From the Pillsbury Website. I made these using homemade meatballs and they were quite tasty. If I were to make them using ground beef, I would try making mini patties, so they are more flat than round. I baked the bombs and turned them over half way through the cooking time.

- Separate dough into 8 biscuits. Cut each biscuit in half; press with hands into circle about 3 inches in diameter.
- In center of each biscuit round, place 2 tablespoons cooked ground beef (or 1 meatball) and 1 cube of cheese. Wrap dough to completely enclose beef and cheese; pinch seams to seal.
- For the Fried Version: Wrap each stuffed "bomb" with 1 bacon slice; gently secure loose bacon with toothpick by inserting it through bacon and halfway into "bomb." In 3-quart heavy saucepan or deep fryer, heat oil to 350°F Fry stuffed "bombs" 4 to 5 minutes or until dough is golden brown on all sides. Place on paper towels to cool. Repeat with remaining "bombs". Serve warm with ketchup and mustard, if desired.
- For the Baked Version: Heat oven to 400°F Place bacon on foil-lined cookie sheet with sides. Bake about 8 minutes to partially cook bacon. Wrap each stuffed "bomb" with 1 slice partially cooked bacon slice. Place bacon wrapped dough 2-inches apart on two foil-lined cookie sheets with dough seam side down. Bake 13 to 15 minutes or until golden brown. Serve warm with ketchup and mustard, if desired.
