SUGARED CRANBERRIES

Sugared cranberries are easy to make and provide a fresh pop of acidity to rich, creamy desserts, like this sweet potato pie. You can also serve these frosted jewels on their own, or skewer them as a garnsh for a festive holiday cocktail.

Steps:

  • In a small saucepan, bring 1/2 cup sugar and 1/2 cup water to a boil, stirring until sugar has dissolved. Add cranberries; return to a boil, then reduce heat and simmer 2 minutes. Let cool completely. Use a slotted spoon to lift cranberries out of syrup (reserve syrup for another use, such as for cocktails); transfer to a wire rack and let dry until just tacky to the touch, 30 minutes.
  • Toss with remaining 1/4 cup sugar to coat. Let dry completely. Store in an airtight container at room temperature up to 3 days. (If sugar has melted at all, toss with more before using.)

Steps:

  • Place brown sugar, water and Crown Royal Maple in a medium saucepan. Heat over medium heat until sugar is dissolved, do not boil. Remove from heat, stir in cranberries, cover and refrigerate overnight. Place about a cup of sugar in a large bowl or cake pan. In small batches, strain excess liquid from cranberries and roll in sugar. Transfer to a baking sheet to dry in a single layer. After cranberries have dried for about an hour, repeat rolling in sugar to thoroughly coat any remaining liquid. Transfer back to baking sheet to dry for at least another hour. Once dry, store in an airtight container in a cool location. Remaining liquid can be bottled and refrigerated as a delicious simple syrup. http://bakelovegive.com/boozy-sparkling-cranberries/

  • Make a simple syrup by bringing the water and sugar just to a simmer in a medium saucepan. Let the syrup cool for a couple minutes and then pour it over the cranberries. If the syrup is too hot the cranberries will burst, so be careful. Cover and refrigerate overnight.
  • The next day, drain the cranberries and toss them with larger grained sugar until they are well coated. I only use a scoop of sugar at a time, and small batches of cranberries, so the sugar doesn't get too damp. Place the coated cranberries on a baking sheet to dry for a few hours.
  • Do a second toss with the regular granulated sugar, this typically takes care of any sticky spots on the cranberries. Let dry another hour or so.
