SAVORY HERB-CRUSTED CHICKEN POT PIE
Tender chicken and mixed vegetables are bathed in gravy made with Swanson® Chicken Broth, then topped with a Pepperidge Farm® Puff Pastry crust that has been dusted with chopped fresh herbs.

Steps:
- Thaw the pastry sheet at room temperature for 40 minutes or until it's easy to handle. Heat the oven to 400 degrees F. Stir the egg and water with a fork in a small bowl.
- Stir the chicken and vegetables in a 13x9 inch shallow baking dish. Set aside.
- Heat the butter in a 2 quart saucepan over medium heat. Add the flour and cook for 3 minutes, stirring constantly. Gradually stir the broth into the saucepan and heat to a boil, stirring constantly. Reduce the heat to a low and cook for about 3 minutes or until the mixture thickens. Pour over the chicken mixture.
- Unroll the pastry sheet on a lightly floured surface. Roll the sheet to a 13x9 inch rectangle. Place the pastry over the chicken mixture, gently pressing the pastry to the edge of the dish to seal. Flute the edges if desired. Brush with the egg mixture and sprinkle with the herbs. Cut several 2 inch long slits on the top.
- Bake for 25 minutes or until golden and filling is bubbly.

- In a saucepan, melt butter. Stir in flour, garlic, salt and pepper until blended. Gradually stir in water, milk and bouillon. Bring to a boil; boil and stir for 2 minutes. Remove from the heat. Stir in chicken and vegetables; set aside. , For pastry, combine flour and celery seed in a bowl. Cut in cream cheese and butter until crumbly. Work mixture by hand until dough forms a ball. On a lightly floured surface, roll two-thirds of dough into a 12-in. square. Transfer to an 8-in. square baking dish. Pour filling into crust. - Preheat oven to 425°. Place potatoes and carrots in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, 8-10 minutes or until crisp-tender; drain. , In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. - Put the chicken on a pot large enough to hold it and add enough water to cover the chicken by an inch.
- Bring to a boil, reduce heat, and simmer for 45 minutes, skimming off the gunk that forms on top once in a while.
- Preheat the oven to 375.
- Make the biscuit dough: Sift the flour, baking powder, baking soda, and salt together.
- Cut in the butter using a pastry cutter or a food processor until the mixture resembles coarse meal.
- Toss in the herbs and add 1-1/4 cup buttermilk.
- Mix until the dough begins to stick together, adding the remaining buttermilk 1 tablespoon at a time, if necessary.
- Form into a ball, wrap in plastic wrap, and refrigerate until needed.
- Set the chicken aside to cool until cool enough to handle.
- Reserve 5 cups of the poaching liquid.
- Melt the butter in a large skillet and saute the carrots, celery, and mushrooms over moderately high heat.
- Cook about 10 minutes, or until light brown.
- Add the flour and cook until light brown, about 3 minutes, stirring constantly.
- Whisk in the reserved broth, 1 cup at a time.

- Heat oven to 200C/180C fan/gas 6. Heat the oil in a large, shallow casserole dish on a medium heat. Add the spring onions and fry for 3 mins, then stir through the frozen spinach and cook for 2 mins or until it's starting to wilt. Remove the skin from the chicken and discard. Shred the chicken off the bone and into the pan, and discard the bones. Stir through the stock and mustard. Bring to a simmer and cook, uncovered, for 5-10 mins.
