Steps:

  • Combine zest, dill, salt, pepper. Using 1 tablespoon oil, brush fish with oil and top with lemon-dill mixture.
  • Place salmon on pan and roast in 425 oven until cooked, about 15 minutes.
  • In skillet, saute leeks in remaining 1 tablespoon oil. Season with salt and pepper.
  • Transfer salmon to platter and top with leeks.

  • Combine and heat vegetable broth and fish stock in a large saucepan on medium high heat. Meanwhile season the fish with rosemary, dill, parsley, salt and pepper.
  • Add the green onions, napa cabbage and carrots to the pot, and place the fish on top. Lower the heat to medium low, and cook for 20-25 minutes. Never serve fish that is undercooked, so make sure it is cooked completely before serving.
  • Serve warm with rice or couscous.

Broiled Salmon with Lemon and Dill image

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper. Lightly squeeze the remainder of the lemon over the whole salmon; not too much, you don't want your seasoning to run off.
  • Cook in the center of the preheated oven on a low broil until easily flaked with a fork but still juicy, 15 to 20 minutes.

  • Cook cream cheese spread and milk in large skillet on medium heat 3 min. or until cream cheese is completely melted and sauce is well blended, stirring constantly with whisk.
  • Stir in leeks. Top with fish; cook on medium-low heat 5 min.
  • Remove fish from skillet. (Fish will not be done.) Add peas and lemon zest to sauce in skillet; mix well. Top with fish; cover. Cook 3 min. or until fish flakes easily with fork and leeks are tender. Sprinkle with dill.

Steps:

  • Cut the salmon into 1" squares.
  • Heat the olive oil in a 12" nonstick pan over medium-high heat and add the salmon cubes and ginger.
  • Sear together for about 1 minute, then pour the mirin, soy sauce, and vodka over the salmon.
  • Turn the heat to medium and cook for about 3 minutes, until the fish turns pale.
