BRANDIED CINNAMON APPLES
This is a great adult garnish for waffles, ice cream, pancakes, oatmeal, etc. Turn one of your weekend mornings or any morning you have off into an adult brunch session with these apples as part of the menu. I know I do!

Steps:
- 1. Peel, slice, and core your apples. (I cut the apples in wedges.) Mix together 1 tablespoon of the Brandy with the cornstarch. Next, in a medium saucepan, melt the butter. After the butter melts, add the brown sugar to the melted butter. Cook this butter/sugar mixture for a few seconds until the sugar completely dissolves (make sure to stir the mixture while the sugar melts). Then, mix in the brandy/cornstarch mixture, vanilla, nutmeg, allspice, and cinnamon into the sugar mixture. Next add your sliced apples to the saucepan, and cook for 7 to 10 minutes or until desired tenderness. Once apples have cooked remove the apples from heat. Once the apples have sit for about two minutes, add the last two tablespoons of Brandy to the apples and stir.

- Combine apple cider, apple brandy, 1/4 cup plus 1 tablespoon brown sugar, honey, cinnamon, ginger, nutmeg, cloves, pepper, and salt in a pot over medium-high heat. Simmer until flavors combine, about 10 minutes.
- Pour apple cider mixture into heat-proof mugs. Twist orange zest strips between your fingers to release the essential oils; drop 1 into each mug. Add 1 cinnamon stick to each mug.

- Combine sugar and water in a large saucepan. Bring to a boil; cook and stir until sugar is dissolved. Remove from the heat., Place apples in a large glass or plastic container; add the sugar mixture, brandy, cloves and cinnamon stick. Cover and let stand at room temperature for at least two weeks, stirring once a week., Strain brandy mixture; discard apples and spices. Pour into glass bottles. Place an additional three cloves and one cinnamon stick in each bottle.

- Peel apples and cut in half lengthwise; remove cores. In a large saucepan over medium heat, bring the water, sugar and candies to a boil, stirring constantly until sugar and candies are dissolved. Reduce heat; carefully add apples. Cook, uncovered, until apples are tender, about 8 minutes., With a slotted spoon, transfer apples to a serving dish; pour syrup over apples. Serve warm or chilled. Garnish with mint if desired.
