  • In a 5-qt. slow cooker, combine the first 11 ingredients. Top with bratwurst. Cover and cook on high for 4-5 hours or until potatoes are tender. Discard bay leaf. Sprinkle with bacon.

  • In a large skillet, sauté onions in margarine until tender.
  • Add the potatoes, sauerkraut, wine, broth, brown sugar, vinegar, mustard, caraway seeds, bay leaf and pepper.
  • Cover and simmer for 35-40 minutes or until potatoes are tender.
  • Stir in the bratwurst; heat through.
  • Discard bay leaf.

Steps:

  • Pour beer into a pot and heat over medium heat. Place brats and kraut in beer and simmer for approximately 10 minutes. With tongs, remove brats from beer and place 1 in each bun. Using a slotted spoon, cover brat in sauerkraut. Drizzle mustard on top of kraut.

Steps:

  • In a medium saucepan, bring the beer to simmer over medium-high heat. Reduce the heat to low and add the onions.
  • Preheat a grill to medium.
  • Over medium coals, grill the brat patties on both sides until cooked through. Add the brat patties to the beer and onions, and cook on low heat, just below simmer, (about 140 degrees F). Hold until ready to serve.
  • While the brats are grilling, add the sauerkraut to a saucepan over medium heat. Stir in the butter and water, and cook for about 30 minutes. Set aside. At assembly time, put a brat patty on each roll bottom and top with a few braised onions. Cover the onions with the top of the roll. Put a Swiss cheese triangle on top of each roll and secure with a frill pick. Arrange the rolls on serving plates.
  • Put a dollop of mustard on each plate and smear it with the back of a spoon. Fill 1-ounce shot glasses with sauerkraut and serve next to sliders on the plate. Serve with beer chasers.

  • In a medium skillet, bring 1 inch of water to a boil, reduce heat to simmer, pierce the casings of 4 pieces of bratwurst and set into a medium skillet. Simmer sausages 10 minutes, then remove to a cutting board, pour water out of pan and return pan to stovetop, adjusting heat to medium high heat. Slice sausages on an angle, 6 cuts per wurst. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and set slices into hot skillet. Brown 1 to 2 minutes on each side.
  • Place sauerkraut into a colander. Rinse and squeeze dry. Add to the browned bratwurst slices. Stir in sweet red pepper relish and warm through another 1 to 2 minutes. Transfer to a serving dish and place along side cocktail or quartered sliced dark bread. To serve, spoon sliced wurst and sauerkraut onto bread.

  • Brown sausages and onion slices in oil in a wide skillet. The sausages do not need to be cooked through at this stage, you just want to get some color on them.
  • Add sauerkraut, sugar, and beer. Stir as best you can around the sausages.
  • Bring to a slow boil, reduce heat, and simmer until sausages are cooked through.
  • Spread buns or rolls with mustard, and add a sausage and a bit of the sauerkraut and onion to each.

Steps:

  • Boil your carrots and potatoes until they are almost tender; drain well.
  • Put your brats in a skillet lightly prick them, pour in the beer, cover and simmer turning them once until the beer has evaporated.
  • Finish browning the brats, remove and place them in an oven proof baking dish 8x8x2-inch or something similar.
  • Return the skillet to medium heat add 1 tbs veggie oil and saute the onions until golden, add kraut, chili flakes, brown sugar, paprika, salt and pepper. Mix well scrapping all the bits of brown from the bottom of the pan.
  • Your kraut mixture should now be a golden color. Add carrots and potatoes to the Brats; cover with the sauerkraut mixture, seal with foil.

  • Crush celery seeds and caraway seeds in a mortar and pestle until ground; set aside.
  • Place bratwursts into a large nonstick skillet over medium heat.
