Steps:

  • Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.
  • Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.

2 large eggs
1 cup dried Italian-style bread crumbs
3/4 cups freshly grated Parmesan
4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
Salt and freshly ground black pepper
6 tablespoons olive oil

Steps:

  • Chop the scallions, keeping the whites and greens separate.
  • Heat 1 tablespoon of the oil in a medium saucepan over medium heat until hot. Stir in the scallion whites and 1/4 teaspoon each salt and pepper and cook, stirring occasionally, until the scallions are golden, about 2 minutes. Stir in the beans along with any liquid in the can, bring to a simmer and then remove from the heat. Adjust seasoning if needed.
  • Pulse the banana chips in a blender until finely ground. Stir the banana crumbs together with the panko and jerk seasoning. Sprinkle each pork chop with a generous pinch of salt and pepper, and then dredge them in the banana crumb coating, pressing so the crumbs adhere.
  • Heat 3 tablespoons of the oil in a large heavy skillet over medium-high heat until hot. Then add the pork chops in batches and cook, turning once, until golden and just pink in the center, about 8 minutes total. Wipe out the skillet and cook the remaining pork chops with the remaining 3 tablespoons oil in the same manner. Let the pork stand 5 minutes.
  • Serve the pork with the rice and beans, sprinkled with the reserved scallion greens.

1 bunch scallions
7 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
One 14-ounce can black beans
1 1/2 cups banana chips
1/2 cup panko
3 teaspoons dry jerk seasoning
Four 8-ounce bone-in pork chops
Cooked white rice, for serving

Steps:

  • For the salsa: Heat the oil in a medium saute pan over medium heat. Saute the pineapple, Fresno chile and red onion until tender and the juices have been released, 5 to 7 minutes. Add the guava jelly, soy sauce, ginger and garlic; stir together and cook for 1 minute. Add a drizzle of sriracha if desired. Stir in the cilantro and scallions.
  • For the pork chops: Set up a dredging station with three separate bowls: one with the flour, another with the beaten eggs and soy sauce, and the last with the breadcrumbs, coconut flakes, five-spice powder, garlic powder and some salt and pepper.
  • Dip the pork chops in the flour, then the egg and then in the breadcrumb mixture.
  • Heat 1 inch of oil in a large saute pan over medium-high heat. Shallow fry the dredged pork chops until golden brown, then flip and cook to an internal temperature of 145 degrees F. Remove the pork chops from the pan and set aside to rest for 5 minutes.
  • Serve the pork chops with salsa on top and macadamia nuts as garnish.

1 tablespoon canola oil
1/2 ripe pineapple, skin removed, diced
1 Fresno chile, finely chopped
1/2 red onion, diced
1 tablespoon guava jelly
1 tablespoon soy sauce
1 teaspoon minced fresh ginger

1 1/2 cups panko breadcrumbs
1/2 cup unsweetened coconut flakes
1 teaspoon five-spice powder
1 teaspoon garlic powder
Salt and pepper
Canola oil, for frying
1/2 cup candied macadamia nuts, chopped, for garnish

PECAN-CRUSTED PORK CHOPS WITH APPLES

"Pork chops are surprisingly lean and lend themselves brilliantly to pecans and apples. In fact, the combination of the browned pork chops and the toasted pecans is the real winner here. It's a simple combination where the richness of the toasted pecans teams up with the wonderful flavors of the cooked pork chops. The lemon zest in the nut crust and the apples add a burst of freshness to the dish." -Alex Guarnaschelli

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2. Nut Crust: Stir all ingredients together in a small bowl; set aside.
  • 3. Pork Chops: Heat a large skillet over medium heat and add oil. When the oil begins to smoke lightly, season the pork chops on both sides with salt. Arrange them in a single layer in the skillet. Cook for 2 to 3 minutes, or until browned. Turn over and cook for an additional 2 to 3 minutes. Transfer to a baking sheet. Top each pork chop with reserved crust. Bake for 15 to 20 minutes or until nut crust browns and pork reaches an internal temperature of 145 degrees F.
  • 4. Meanwhile, cook the Granny Smith apple slices with the honey in the pan where the pork chops were cooked over medium heat. Stir occasionally, until tender, 5-8 minutes. Stir in the lemon juice, set aside.
  • 5. Arrange the pork chops on a platter on top of the apples. Serve immediately.

1 cup Fisher® Pecan Halves, toasted and coarsely chopped
1/2 cup Panko breadcrumbs, toasted
4 Tbsp. unsalted butter, melted
2 tsp. grated lemon zest
1/4 tsp. kosher salt
The pork chops:
1 Tbsp. vegetable oil
4 center-cut bone-in pork chops, preferably with the bone still attached, 1 to 1½ inches thick
2 Granny Smith apples, cored, halved and cut into ½-inch thick slices
1 teaspoons honey
1 tsp. lemon juice

CUMIN-BAKED PORK CHOPS

This fast, easy recipe for succulent pork chops came to The Times in 1997, part of a deep dive on cumin by the writer Molly O'Neill. It is simple to prepare and can be a delicious end to a long day. Using crushed cumin instead of ground will give the chops a bit of fresh texture, but if you don't have cumin seeds, feel free to substitute.

Steps:

  • Place butternut squash into a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 30 minutes. Drain.

Continue cooking until wine evaporates and pork chops are cooked through, 4 to 6 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

  • Place pork chops on plates; top each chop with avocado slices, butternut squash mixture, and bacon.
